When considering waffles, many people's minds immediately go to the Belgian style, which is typically thick and often served with various toppings like fruit, cream, or ice cream. However, the Dutch stroopwafel offers a different experience. It is a thin waffle, baked and then sliced horizontally before being filled with a layer of caramel syrup. This creates a delightful chewy texture and a sweet, rich flavour. Stroopwafels are traditionally enjoyed placed over a hot cup of tea or coffee, allowing the steam to gently warm the caramel inside, making it soft and slightly gooey – a truly comforting treat.

Amsterdam has numerous places selling stroopwafels, and many have gained popularity through social media. However, I particularly recommend Rudi’s Original Stroopwafels for its commitment to the fundamentals of a classic stroopwafel. An absolute must when visiting Amsterdam!

Many, many vendors in Amsterdam claim to have the 'best' stroopwafels or the 'freshest' stroopwafels, Rudi's make no claim other than that they are the original, which of course means freshest and best comes along with it! When you see the stroopwafels being made right in front of you, fresh to order you know you've got the freshest. When you taste the stroopwafel handed to you by the very charismatic and friendly man who has a joke and a laugh with every customer, you know you've got the best.

Rudi's family history with making stroopwafels to an original family recipe really shines through, with a very humble foodtruck at a fantastic market street, you really feel like you're supporting a great group of people. 2.50 euros for a plain wafel and 3.50 euros for a chocolate one, you get great value. They also have prepacked bags of their wafels available which I think were around 4 euros - I write this review over a bag of them right now.

As I say, an absolute must. Make the trip out of centraal on a tram or take a walk, ignore the rainbow lit shops selling warmed up inferior wafels at double to triple the price and get some proper homemade wafels at great value by Rudi's. This man was born to Stroopwafel. We were only in Amsterdam one day: my birthday. After finding out about Rudi's stand online and realizing we happened to be there on a day he would be open, we walked 35 minutes in the rain across Amsterdam to come to the market after lunch.

It is just a stand at a farmer's market: but it feels like you enter a unique atmosphere. They clearly take great pride in what they do.

Rudi was very friendly and great at dealing with the customers; lots of great jokes. When he handed me my stroopwafel he told me I deserved it after a hard year: it really has been a hard year. It felt so genuine, and on my birthday, I really appreciated it.

And the wafel. So good. Nothing compares honestly. It was unbelievable. Warm, flavourful, gooey, fresh. I can't even describe. We bought to-go packs and have been referring to them as "gold" in conversation (i.e "did you pack the gold safely?). No one even questioned it.

If you are in Amsterdam, you must go. I promise it is worth it. Incredible experience I...
