Pro's: Very nice cakes! The vegan brownie was my favourite balance does lack. Very fluctuating experiences that I have had here (good ones and bad ones). My first times were really positive: absolutely loved their brownie and I received help with choosing a nice coffeeblend for the americano (1-2 months ago). Also, very positive staff was present.
Nevertheless, today was quite a change. I was sitting near the door with my laptop as the sun was shining and because the working places were completely occupied. After approximately one hour I got approached and asked to leave to the working place, as that appearently was only meant for people to work with laptops (nowhere indicated, and I saw people working on their laptops also at different places nearby me, but okay). I told him that all the places were occupied at the working place table, at which he replied that there were some places available now. Unfortunately, this was not the case when I checked it out, so I joined another table as I did not want to bother the people working there again.
Another hour later I got approached that there is appearently this 1-hour policy: thus, every hour your are obliged to get a drink/something to eat etc. I did not know this, so one of the workers approached me telling about this and whether I would like to order something (or basically to leave otherwise). It was not busy at all though when this question was asked, so I was surprised that this was asked (despite their policy). I come here quite regularly, and from all the cafes that I have visited in Maastricht (since I have been living here) I have never been confronted with something like this. It can make someone feel quite unwelcome, especially when you make the efforts to come here regularly and to advertise the place on the university's instagram account (if it was busy, I would understand, but this was not the case at that moment of time).
I do understand that money has to be earned, and I really see that you guys are trying to provide the best service possible looking at the responses you gave to previous reviews, but I would recommend to try to find a balance between earning money and providing a nice experience to your customers :) (Besides the previously given feedback: even a small hello when people come in would do the job, or asking how they liked their coffee/cake, I have horeca experience myself and during my shifts this was sooo important! This style is often referred to as "third wave coffee", and it tends to taste very different from the darker styles the general public is used to. If you don't know what I'm talking about (or if the terms "single origin", "light roast" don't ring a bell), ask the baristas for advice and tell them it's your first time.
I Love Fixed Gear Coffee!!!
I come here once per week. There's always a new coffee rotating on the grinders for the espresso drinks. And always some interesting beans available for pour-overs (check the magnetic board to your left when facing the counter).
It's the only place in Maastricht that does third wave coffee properly. On top of that, the space is amazing and the staff is the type of cool and friendly that makes you think you're in a Brooklyn coffee shop.
Of course, this place is not just about coffee, it's also about cycling. Maastricht is a regional paradise for cyclists, and Fixed Gear is a wonderful place to relax before or after a ride with your crew. And also, to get yourself some cycling gear!
Fixed Gear makes Maastricht a little more like home for me, I wish the owners and the barista team much success for many years to come!!!

I discovered Fixed Gear Coffee in Maastricht in October, the blonde guy made very nice coffee, an excellent flat white with Colombian beans, and the apple pie was also very tasty, I came back in a week, and the long-haired barista was also very good. Next time it was a fiasco, the girl prepared mediocre far-from-special coffee with over-heated chunky milk which tasted like the worst train station coffee you could try but it was drinkable. Well, we all are not perfect, and we can make mistakes, so I gave this barista another chance, and came back again as I really enjoyed the coffee when the guys were at it. This time the experience was much worse. The coffee was very bad, and I could not drink it so I just poured out the coffee in the drain, and threw away the paper cup in the bin nearby.
