We were hyped to find Maya Mexican Restaurant in Cebu because, let’s be real, good Mexican food in the Philippines is like finding a unicorn. We walked in, and wow—the place is stunning. The design was so on point it practically whispered, “You’re about to have an authentic Mexican feast.” Plus, there’s a tequila bar on the second floor, and nothing screams legit like a dedicated tequila space, right?
And then… the food parade began.
First out of the gate: the margaritas. I took one sip, and my face puckered so hard I might’ve reversed aging by five years. It was basically sweet and sour mix with a splash of regret. But hey, we were committed.
Next came the Queso Birria Tacos—and let me tell you, these were the shining stars of the night. They were cheesy, flavorful, and had us wishing we’d ordered them in bulk. At this point, our hope was still alive.
Then the nachos hit the table. Picture a mountain of chips stacked so high, the ones at the bottom were just... chips. Naked. Untouched. And for that extra authentic touch? They were sprinkled with carrots. Because nothing says “Viva Mexico” like random root vegetables on your nachos.
By now, we were on a rollercoaster of emotions, and then the fajitas arrived. I have two food allergies—red onions and gluten—so I made it crystal clear: no red onions. To their credit, they swapped in white onions. But then… they garnished the whole thing with a confetti of red onions. At this point, it felt personal.
But wait, there’s more! Rather than send them back, we had a genius plan: the rest of the table would eat the fajitas, and I’d just pile some of the fajita meat onto my carrot-loaded nachos. Problem solved, right? Nope.
The sweet manager swooped in, determined to make things right. She tried so hard—like, A+ for effort—and brought me out a special plate of... fajita wrapped in soft flour tortillas. Which would’ve been perfect if my second allergy wasn’t gluten. So close, yet so far.
Final verdict? Go for the ambiance, the gorgeous space, and the awesome staff (seriously, they’re the real MVPs). Just skip the margaritas and keep your food expectations... flexible. And whatever you do, definitely order the...

Admittedly it was busy tonight, but we had to sit in the lounge area,with our table at knee level, even though a table remained open during our nearly 1 1/2 hours there, . We ordered 2 cocktails and a water. They brought a bottle of water, but no glass. We ordered nachos, a burrito and an enchilada dinner. The enchilada dinner still hadn't arrived with the other items nearly consumed. I told them to cancel the dinner, but then they brought it after we had finished eating everything else. I declined it. The waiter never returned to our table to see if we needed any more drinks, or anything else during our evening. I asked to see the manager (a first for me), and although he was pleasant, all he suggested was that I take the enchilada dinner with me. I declined, and they removed the dinner from the check. Read moreI am writing it in here once, and for all. Maya Mexican is the crown jewel of the Abaca Group. Among the restaurants we have dined under its umbrella, Maya Mexican definitely was, without a doubt able to leave us "the mark." We had the empanadas, soft tacos and enchiladas and all of them did not fail to scintillate our tastebuds. We've also taken a liking with the bottled sauces which definitely gave the added kick to the dishes. We were hoping to purchase them in house but unfortunately they are not being sold anymore. I hope Mr. Hyatt and the management consider them for commercial production in the near future. I am not mistaken as well to order amaretto sour as our cocktail drink. We also commend the staff for being attentive to our needs and how they engagingly asked about our experience.
