Little did we know when walking in this restaurant that this location is part of a chain of 25 locations across Spain (opened since 1983).
The restaurant’s heritage goes back all the way to the Mauresque occupation when wood fired ovens were introduced in Spain (called Tahona) back in ..700 AD.
This location is huge, two floors, with the basement somewhat less desirable than the top floor. Decoration is traditional madrilene: big wooded coffers for ceiling and big heavy furniture, all wood. Bathrooms are downstairs.
If you come to a suckling lamb restaurant, it’s kind of stupid to order anything else. I read another poster being unsatisfied with ordering a sirloin steak? What did you expect? It’s a lamb restaurant, don’t order anything else. They serve a special breed of lamb called “Churra” and it tasted as delicious as expected.
We witnessed something unusual : they presented our lamb orders, but when they started deboning it, some parts were undercooked. Very professional, they sent it back to quality assurance and it came back perfect. Well seasoned with nothing else but salt, the beautiful taste of lamb comes through and shines like a beacon of light. It was one of our best meals in Spain.
The appetizers are extremely simple and straight forward. Nothing special on the artichokes, but the taste was perfect. Piquillo are cooked in their juices, nothing special, but they tasted really good.
Only the salad was underwhelming. Straight up iceberg lettuce with onions and tomatoes. On the surface, looks insignificant, until you realize the crunch of the iceberg and onions pair especially well with the lamb meat. They know what they are doing.
Service was professional and attentive, with respect to the pacing of how we ate. Exceptional wines and good recommendations by our waiter.
Overall, one of our most expensive meal in all Spain (70€ per person). Seems to draw mostly tourists. We would recommend when in Madrid, just do not be that idiot that orders a sirloin steak.

Ambience- The restaurant interior was decorated beautifully throughout the first floor, definitely picture worthy!
Service- I would have rated Asador De Aranda higher if it weren't for the service we experienced. The staff member attending to us was rude and took some time to take our order despite only a few tables at the restaurant being occupied while we patiently and kindly waited. I hope this isn't a recurring customer experience as the service during our visit did not do justice to the beautiful restaurant interiors and amazing food.
Food- Asador de Aranda was recommended by my mom's friend who lives in Madrid, and suggested we try it for the roasted Lamb. We ended up ordering the Cuarto Asado de Lechazo (roasted lamb) , 1/2 Cuarto Asado de Cochinillo (roasted suckling pig), and Entrecot a la brase (steak) which were all served in generous portions. The roasted lamb is truly the star of the show, cooked perfectly and served very tender. Same goes for the cochinillo, which was equally tender, meaty, and juicy but not as flavorful. My brother had the entrecot which was very impressive in size but we felt that it may have lacked in seasoning too. We ended the meal with the restaurant's complimentary shot and biscuits which were both very sweet to contrast the rich and savory food we ordered.

I dont quite recall what food we ordered in Barcelona, but since they said the grilled lamb was their specialty, then we ordered that. OMG it was better than what I recall. I feel like this is the best grilled lambchops ive tasted in my life. Aside from that, we ordered grilled entrecote and pimientos, paired very well with their house wine, Septiembre Ribera del Duero.
