Panifiesto Lavapiés — Restaurant in Madrid

This review should have bee written a long time ago. We visited this bakery in the summer of 2023. We were staying in an AirBnB very near from this place. But we were going to sightseeing before the place opened, and came back only after it closed. So we could not try the bread even though we used to pass the bakery on our way to the metro station. The reviews on Google maps were awesome, so we were determined to try it. On our last day, we stood in line, and purchased two loaves. I especially want to write about the 100% whole wheat loaf. I have never tried such a nice tangy whole wheat bread before. This is definitely the best whole wheat sourdough I have had. And I live in California near San Francisco, and I am an avid home bread baker. I can only dream of baking a whole wheat bread with such an open crumb. Note that, we actually packed the bread, carried it back to California, and only then cut it and ate it. Even after this travel, the bread tasted fabulous. I am a sourdough conessuier and read that the bread here is amazing. So, I went on a Saturday around 2pm and there was a line, which to me is always a good sign! They were unfortunately sold out of the daily bread (pasas y nueces) which was what I specifically wanted to buy. They told me that they’d have it again tomorrow morning around 10am. So I went back Sunday morning at 9:45am and once again there was a line of people waiting for them to open at 10am. I was able to get the pasas y nueces bread this time and it was absolutely amazing!
