I’ve been staying in Madrid for a month on vacation, and almost every day, whenever I have a chance, I stop by Santos Bakehouse for their incredible pastries. Their canelés are a must-try, and I often pair them with coffee or sometimes one of their savory pastries. Honestly, these are the best pastries I’ve ever had.
Although I haven't been to Paris for the "authentic" experience, I've tried canelés in New York City and Miami, where I live, and Santos Bakehouse's canelés are by far the best. I also had the opportunity to try their sourdough. While I haven't bought much bread due to eating out frequently, the sourdough special with olives and spices I tried was amazing and soft. All their pastries are made with sourdough, which adds a unique flavor and texture.

The coffee beans used are way too roasted probably (almost burnt) and the coffee result bitter.
Pastries are very nice, flacky, good texture and nice ingredients.
Not worth the price
Edit: The response I received felt like an excuse to sidestep the real issue. As someone who regularly reviews coffee shops, I can tell the bitterness in the coffee was caused by over-extraction, likely due to an incorrect water-to-coffee ratio or too fine a grind. Over-roasted beans only intensified this. These are basic brewing errors, and for the price point, such mistakes are hard to overlook. I fully understand the cost of quality, but with high prices, I also expect high-quality execution, which was sadly not the case here.
To the owner: Constructive criticism should be addressed with care. Offering a dismissive response instead of tackling brewing mistakes only undermines customer trust. High prices should reflect a superior experience, not just an expensive cup...
