From the moment I stepped into the store I was greeted with a warm and friendly smile from the staff which immediately made me feel welcomed. The atmosphere was cozy and inviting with a great vibe that made me excited to try their offerings. I decided to sample two flavors: cheesecake & fig and pistachio and noth were out of this world! The cheesecake & fig had this perfect balance of creamy and sweet with just the right hint of fig. The pistachio was rich and nutty exactly how I like it. We dropped in for a midday snack due to Rick Steves’ suggestion. The ice cream and sorbets are delicious! The strawberry and lemon sorbets were bursting with flavors and are obviously made with real fruit. We also had chocolate chip and salted carmel, both creamy and full of flavor.

They give you a dab of a second/third flavor to sample in your cup or cone and it’s a great idea. The mango sample was wonderful!

Once you finish your ice cream, you must take drink from the community water pot. Watch a local do it first then try it yourself. First try, I got water all over my shirt. It’s fun and ice cream makes you thirsty.

I spent two weeks in Spain, during which time I made it a point to taste and compare at least one gelato shop a day. I wish I had discovered Bolas earlier in my Seville stay. I probably wouldn't have wasted my calories on inferior gelatos and would have had more days to experience true artisanal gelato. This product is hand made in small batches into unique and delightful concoctions of pure bliss. It is a small business, operated by the gelato master and his family.
