We were excited to dine with Tradevo Centro’s team. However I do want to give honest feedback-
the food was great, but the service did not match and we felt as though it was cold and not genuine. The Hospitality aspect was completely lacking, specifically from the woman who appeared to be the Maitre D/General Manager (woman in a pantsuit).
She greeted us, sat us (we had a reservation), and took our order. The kitchen was out of a few items, no big deal, so we changed our order. The woman forgot to mention a few items when reading our order back so we corrected her. We never received those items.
My wife and I didn’t care all that much about not receiving those items, but what was frustrating is that we weren’t engaged by the woman (the Maitre D/ General manager- also our server?) again for the rest of our experience. I had to flag down the backwait to order a glass of wine (after patiently waiting for 15-20 minutes), we were never checked on by anyone about our food. We noticed a table next to us get better service by the woman, and then another table across the room get more attentive service from a male server. We mentioned we wished we had him as our server!
The annoying part was the woman acted as if she could honestly care less about us as diners. My wife and I just looked at each other and said whatever, we’ll just go to another restaurant down the street! Just disappointing because we were excited about the Michelin reccomendation and potentially enjoying more food and drinks.

FYI we would have ordered more food, more drinks, dessert, etc. but how can you spend more money (support a business) when one of the leaders of that business actively doesn’t care about you or engage with you as a patron?
On a positive note, hats off to the chef team!!! We had the beef croquetas, octopus, grilled ribeye and Pommes Alligot- all delicious and very much appreciated! Also thank you to the server who did help us...

Dinner - we ordered the cuttlefish noodles, beef sirloin and aubergine fries. The cuttlefish noodles were like nothing we'd ever tasted before, the cuttlefish are the noodles, long ribbons of goodness, perfectly succulent, coat ed in squid ink sauce and topped with tentacle bolognese. Delicious, but very rich - we added a squeeze of lemon to dial down the richness. The steak was also very good, perfectly cooked and lightly flavoured and served with perfect creamy mash. The aubergine fries had a great flavor, although were a bit soft rather than crispy, how we usually like it. We had dessert but it was not so memorable compared to the cuttlefish noodles.
Lunch - in addition to the dinner menu, there was the fresh seafood counter available. we had a party of four so could order more food. We ordered grilled squid (perfectly grilled and seasoned), Carabineros prawns (THE MOST AMAZING PRAWNS - almost as if raw, they were tender with a perfect sweetness) and of course, we had to have the cuddle-fish noodles again.
The fresh bread we had there was also super delicious, light fluffy on the inside and crispy on the crust. The olives were also great - a great way to ease into this fantastic meal.
Service - both times they were super busy (be sure to make a reservation) but they still provided service with a smile, had time to explain the seafood counter, specials and provided recommendations.
Location - we sat both inside (dinner) outside (lunch) and both have their own unique ambience. Being outside you get to be part of the square and the life around you plus the sun, and inside is more formal feel away from the cold of the night.
