LET IT BLOOM - Specialty Coffee n' Brunch — Restaurant in Valencia

Such a great find. I arrived at 0830 upon opening and the owner, who I learned was called Shar, was very warm and welcoming right away. I wanted a place to work for a couple of hours before my flight, but also somewhere with food, coffee, pastries. It's bonus that this place is 100% plant-based. I'm writing this after eating the granola bowl and working for an hour or so. Shar and his team, including his wife, have left me alone to do what I wanted, while also including me in special things like offering me a glass of fresh batch coffee, on the house. There is no pressure at all. I like it so much here that I decided to get my bag from the hostel and return to be here until my flight. Shar told me to leave all my things and keep my table, even allowing me to leave without paying. His level of trust is really, somewhat sadly, refreshing and that is the reason I'm writing this review. Spreading trust, openness and kindness is something I enjoy and find somewhat difficult to find in the world (and of course, I understand why). Shar has shown that he is a gentleman and a lovely man. As an aside, the atmosphere in the café is friendly and very chill. The music is low and unobtrusive, and allowed me to work without headphones, which is rare for me. I don’t even know where to start. This café has become my absolute favorite in Valencia. The owners are the friendliest, most empathetic people I’ve ever met. I love their “guest specialty coffee” concept – every month or two, they switch things up, bringing in the best beans from places like the US, Amsterdam, Rotterdam, and other cities and countries known for amazing roasters.

Shardie, the café owner, is one of the top baristas in Spain (from Brazil 💕) and knows specialty coffee like a true master. He’s always happy to share details about the beans and never compromises on brewing quality. Shardie, many thanks for your big heart and empathy for every guest 🥹💕

Raphaela, the head chef, and her team create divine vegan desserts and dishes. Their Umami toast is the best thing that’s ever happened to me and my taste buds🥹

I absolutely adore this place, visit it multiple times a week, and wholeheartedly recommend it to anyone who loves great coffee, friendly vibes, and delicious vegan food.

Let it Bloom has become my favorite cafe and my go to place in Valencia. The Brazilian owner and the rest of the staff is wonderful, always offering great service. After going so many times now, I can also say that the food is incredible (as a Norwegian who eats a lot of sour dough bread and specialty bread generally, I’ll tell you their bread is 10/10). This is the place for people who appreciate GOOD quality coffee, and for that you need to pay a little extra, but it’s so worth it. The best iced latte in Valencia (and I think I’ve tried them all!), it’s 4€ so yeah it’s a liiittle bit pricy, but their coffee is just insane. I’ve tried almost all the pastries by now and the chocolate cookie and the pain au chocolate are my favorites 🫶🏼
