Lacks saltiness. If you've had chicken before, then you probably know how bland chicken meat can taste. I had Totto Ramen in Hell’s Kitchen years ago, and it was remarkable enough for me to remember it. Since there weren't any decent ramen places in NYC at the time, it was considered a gem. So I decided to give the Taiwan branch a try to relive some good old memories, but I ended up regretting the choice I made.
First of all, I didn’t have to wait long to get seated. I ordered the creamy chicken broth with pork cha siu. The presentation looked great, especially the cha siu that appeared to be blowtorched, making it look amazing. Sadly, it didn't have any charred profile, which was the first letdown. The chicken flavor was rich but not smooth, as you could taste small bits of bone marrow in your mouth. Most importantly, the broth lacked salt. Condiments can only do so much to enhance flavor, but not saltiness.

I ordered the regular chicken broth ramen. Went with the set A option. I opted for kimchi and a bottle of juroku cha. Also added an onsen egg and more seaweed. All for 355NT.
You may ask for the ramen to be cooked more or less, depending on your liking. Mine was regular and it was chewy and easy to eat. The broth was just nice for me in terms of richness. Not too salty which I like. The chicken slices were tender and lightly marinated, not overpowring with a tinge of peppery taste. The kimchi sidedish gave a good oomph as an addon.
Service was excellent.
Overall, a nice simple meal with good balance of tastes.

Chicken soup broth has great depth with surprising portion of meat and other ingredient. Chicken breast made by sous vide technique elevated the taste and mouthfeel. Spicy chicken soup flavor was not that hot at all if you usually add spice into your dish. Very mild and integrate well.
Pork (mega paitan) flavor however was too heavy and greasy for us. Gotta give it solid credit for its meat portion again, soup taste nice too. Not for those who look for sth easy to digest tho.
Fried yam , nth special, good side dish with ramen tho. Both broth are so flavorful that I could directly dip the yam into the soup without the pepper salt aside.
Recommend for those by chance visit the neighborhood. Not worthy to come all the way or queue for long time tho.
