A Perfect (Date) Night at Chez Wham
I went to Chez Wham last night for a much-needed date night with my husband, and it turned out to be pure magic from start to finish.
The vibe? Effortlessly cool—warm, buzzing, and brought to life by live music from Ryan Gibbs, whose soulful voice and infectious energy had the whole room hooked. One of the best touches? They hand out little slips of paper so you can request a song. Naturally, I couldn’t resist. I asked for Bon Jovi’s “Livin’ on a Prayer”—and not only did Ryan absolutely nail it, but I fully leaned into the moment, belting out the chorus like I was back in college.
It was the most electrifying, joy-filled throwback—like a flashback to my uni days. Even the waiters were dancing, completely vibing with the music, which only added to the magic. For a few minutes, it felt like the entire restaurant was in on the same shared memory.
And then there’s the food. We started with a gorgeously fresh, zesty ceviche that set the tone perfectly. But the true standout? The kebab—richly spiced, unbelievably tender, and bursting with flavor. Chef Hadrien’s dishes are creative and innovative, with every plate telling a story. Read moreWe had dinner tonight at Chez Wam, St. Régis the palm gardens. The place is a hidden gem in Nakheel mall. The ambiance is fantastic, music is nice and at the right volume, the staff is friendly and courteous, cocktails were delicious and, the food is amazing, you can clearly taste the personal experience of Chef Adrian. We had tuna sumac, beef tartare and the fried Brie cheese. All were amazing. The tuna and the tartare were superb, made with a personal touch that reflect the experience of the chef. We loved those plates. The main course we ordered were the sea bass, the beef tenderloin and mixed vegetables as a side. Those were so flavorful, you do not want the plate to finish. Desert was another level of culinary endeavors; wow the 1001 Night and Guanaja chocolate fondant were superb. You can taste the tahini in the fondant chocolate sauce and the ice cream is so matching. A very creative place with a Mediterranean blend on European/french plates. Read moreThe restaurant is located in the courtyard of St Regis which was a nice discovery because it is actually hidden if you don’t go out for dinner. The ambience of the restaurant was very nice, reminded me a bit if Mimi Kakushi, which we also like a lot. There were people sitting at the bar having drinks and others having dinner. The music was not loud so we could actually talk with a nice ambience. We had dinner and when we just sat at the table the waitress asked us if we wanted anything to drink so it was a nice welcome. By the time we finished checking the menu, our drinks were already on the table. The food experience was very good: beef tartare, wild mushroom barleysotto (risotto made out of barley) and short ribs were just amazing. The service was outstanding, the waitress was by our side all the time and we didn’t have to look for her at any moment during the dinner because she was always there when we needed.
