I was very excited to visit Kindling when it opened up, as I am friends with one of the chefs. I'm glad to say that I had an exquisite time at kindling, due to many factors. I was lucky enough to dine at kindling on their opening week, which managed to acquire me 20% off, I had seen they posted it was 50% online, but that clearly changed. However, any price for kindling dining experience is well worth it.
The restaurant is very small and personal, likely to seat 20-30 customers. The kitchen is open and in the middle of the restaurant and a few chefs will work at a time. the woodwork used to frame kindlings interior is beyond lovely. Fresh wood occupies the ceiling framework and the kitchen pass. Fresh smells of pine come to mind, delightful.
Each table is seated with Robert Welch cutlery, which i'm a huge fan of, detailed, antique plates and a ceramic urn full of water.
The staff are very polite and friendly, me and the manager had a good laugh and he was a lovely man.
Kindling offers a large drinks menu, sporting several in house made cocktails. My personal choice was "something to mull over", which I would say was my perfect drink. Such flavour and perfection in one glass is outstanding and deserves congratulations! They also serve a range of wines, soft drinks and hot drinks, so everyone is welcome.
The menu at Kindling is designed for sharing, which is becoming increasingly popular in restaurants, especially Brighton. There is several vegetarian and vegan options, enough to fill this vaste pit I call a stomach. Me and my girlfriend went for 3 "starters" (they don't call them starters), 3 small plates, one sharing plate and 2 desserts. We were both very full and amazed at the labour taken to perfect each dish. My favorite was the potato terrine with parsley shallot salad. All the flavours worked wonders with each other, and you couldn't of added anything to make it better than it already was.

The crowd spoke volumes - this is a place that has earned its popularity. With tables full, I was offered a seat at the bar overlooking the open kitchen - a front-row seat to the action. And action there was: two chefs running a tight and busy ship, clearly under pressure, but never compromising on quality.
Kindling’s signature use of charcoal cooking shines through in their sirloin steaks. Cooked precisely to order and rested with care, the steak had a well-judged ratio of fat to lean, elevated by that unmistakable kiss of smoke from the grill. The accompanying peppercorn sauce was well-balanced, neither overpowering nor timid, and a sample of their mushroom sauce offered additional depth - earthy, savoury, and seasoned with finesse.
Sides included a comforting mac and cheese - creamy, just cheesy enough, though I found a dash of mustard brought an extra dimension that suited my palate. Less successful were the chips. Not the skinny, crisp French-style frites I had hoped for, but a more rustic cut that lacked that satisfying crunch. A minor disappointment in an otherwise strong showing.
Despite the extended wait for food - a natural consequence of the stretched kitchen team - the experience remained enjoyable. Being seated at the bar gave a rare and honest view into the rhythm of a working kitchen. The chefs, doubling as servers at times, were personable, attentive, and clearly proud of their craft.
Would I return? Absolutely. Kindling delivers flavour-forward food prepared with skill and care. Next time, though, I’ll be hoping for a mountain of proper skinny fries to complete...
Read moreThe food was absolutely delicious but unfortunately we had to wait around an hour to receive it. The service was friendly and polite just very slow from the kitchen side of things. The restaurant was not busy as it was late afternoon.
We cook steaks at home all the time so we know how long it takes to cook. ... not an hour! We didn't complain as we weren't in a rush but was mindful the children were starting to get fidgety! When the food arrived we tucked in eagerly and savoured every mouthful. We had a sharing platter (which included bavette, sirloin and lamb chops) with an extra rib eye steak, a salad and 2 macaroni cheese.
Would have been great if they had fillet steak as a choice of cut but what we had was very tasty. Well cooked (medium rare) and well seasoned.
My husband wanted a coffee so we decided to have a couple of desserts too. The drinks arrived promptly but again had to wait a while for the desserts. These were worth waiting for. Satisfied the sweet tooth!
I felt where we sat was a tad chilly but I expect it can't really be helped as they have to have strong extractor fans due to the open kitchen.
The meal came to just under £190 for 2 adults and 3 children. For the quality of food and drinks, it was good value. ..just not sure if we would be back again in a hurry because of how long the food took. If we were to come back then it would have to be on another school holiday when we don't have to rush to get back home.
