TL;DR - central location, great views, interesting menu, excellent service, amazing food and drinks, good prices!
Meli cafe is a wonderful spot hidden away in a central location. It's located opposite Haymarket, up a few flights of stairs (lift available). Inside there are two seating areas, with one of them being particularly bright and airy, and having lovely views over Northumberland Street below (though it can get a little noisy when the windows are open and the bustle of the high street can be heard).
The drinks menu has plenty of choice. In addition to the typical cafe options, there are various specialty teas, unique hot drinks and iced coffees, plus of course the Greek coffee. There are vegetarian paninis and various homemade sweet and savoury baked goods. The owner is very friendly and happy to talk through the menu. The prices are very reasonable too, especially considering the city centre location. They also have a loyalty stamp system where you can get a free drink after a certain number of stamps.
The paninis, cakes and coffees are excellent. In particular the cheddar and apple scone is delicious. Also try the orange and semolina cake!

As a fellow Balkan person I find the flavours reminding me of the wonderfully Greek cuisine that I've grown around, with regional twists.
The chef de patron does it an absolute justice! I came for the first time today and I saw that he had Greek coffee on the menu, more about that in a minute. I spoke with him and asked if he had spanakopita in, he, sadly didn't, but what he had was arguably even better! He had made a wonderful focaccia with all these wonderful flavours that I was craving, it was as light as a cloud, yet bursting with flavours so expertly and delicately balanced that I dare say he could give some top chefs a run for their money!
As for the coffee, it's gorgeous, it's more of a medium body leaning towards a lighter flavour, but that's how I actually prefer my coffee. It was beautiful and well balanced with light notes of fruits, but that's to be expected of a medium-light roast!

I was looking for somewhere near Haymarket metro station that works ld do vegan food and this cafe came up first. There's a reason most reviews have a 5*. The atmosphere was buzzing when we walked in, the owner gave us a friendly smile and explained what was available and we had a choice to sit in the first part of the cafe or further in where there are plenty of window seats to watch the world go by. In a new place I always try a black coffee first which was perfectly poured, we also got a traditional orchid/nut based drink and homemade soup. There were other vegan options on the menu too.
