I think we must have got an off day reading other reviews which is a shame but mostly it’s how staff deal with situations when something goes wrong that either makes or breaks a place. We had a reservation at 1pm but unfortunately our train was cancelled so we had to push it back slightly - realised the restaurant doesn’t have a phone line to contact which is ridiculous in my opinion and it was difficult to try and work out how to let them know. When we arrived we were seated and ordered food and drinks. Our bottle of fizz was bought over and was lovely. After an hour and ten minutes we hadn’t receive a single plate of food so I asked the waiter - he said I’m really sorry there’s an extra long wait for food today because of staffing issues. I asked if we could at least maybe have the plate of pickles we ordered as a snack as this is just a cold plate? But I don’t understand why a single person wouldn’t come and say to us that the food would be extra late, that there was a delay etc. An hour and ten minutes isn’t reasonable at all. He came back with the pickles and said the food was next. There wasn’t really an apology given - maybe even offering a drink might have softened this. But no one seemed bothered. We initially received the vegetable items first. Then the steak a little time after. Everything was pretty cold to be honest. We ate our food and about 30 minutes later the waitress came to clear our plates and we pointed out one of our dishes never arrived. She said I can take it off the bill but still bring it - so I asked if it was already being cooked because of the significance in time and she wasn’t sure so I said to just cancel it. In their defence we had cheese to finish and the lemon tart which were delicious but again only two biscuits served with the cheese seemed a bit odd? We recently celebrated James’s birthday at Raymond’s in Nottingham’s Lace Market, and what a splendid evening it was! The intimate atmosphere and top-notch service made for a memorable night.
Dishes We Tucked Into: • Maldon Oyster with Dill Emulsion and Mignonette: These oysters were the bee’s knees—fresh and briny, with the dill emulsion and mignonette adding a smashing burst of flavour. • Fish Crackling with Sour Cream and Trout Roe: An absolute belter! The crispy fish skin paired with tangy sour cream and popping trout roe was a delightful surprise. • Lamb Belly Skewer with Puy Lentils, Fried Garlic, and Pickled Leeks: The lamb belly was cooked to perfection—tender and flavourful. The earthy lentils, crispy garlic, and zesty pickled leeks complemented it brilliantly. • Braised Ox Cheek with Pomme Purée and Pickled Red Cabbage: This dish was a proper treat. The ox cheek was melt-in-the-mouth, and the creamy pomme purée alongside the tangy pickled red cabbage made for a cracking combination. • Pommes Anna with Rarebit Sauce and Stout & Onion Purée: The Pommes Anna were spot on—crispy on the outside, tender inside. The rich rarebit sauce and stout & onion purée took it to the next level. • Fried Chicken with Buffalo Sauce, Smoked Buttermilk Ranch, and Gherkins: An absolute corker! The fried chicken was crispy and juicy, and the tangy buffalo sauce, smoky buttermilk ranch, and crunchy gherkins made it a standout dish.
The wine selection was ace, offering a variety of options that paired perfectly with our meal. The staff were knowledgeable and attentive, enhancing our dining experience.

To start: the wine list is so incredibly extensive, putting a lot of dedicated wine bars to shame. I was incredibly excited to find a large variety of skin contact/natural style wines on the list in addition to your more traditional vino. Rarely do you see you see a Pet-Nat on a wine list, let alone three of them which are all served by the glass!
We started by ordering olives, oysters and focaccia. I can honestly say that the olives are possibly the best I have ever had. We did feel a little let down by the focaccia, however, as it was a little less crisp and airy than we had hoped for.
We opted to order four plates between two of us, which ended up being a really good amount of food; we struggled to finish it all despite being very hungry.
The absolute standouts for us were the schnitzel, the crispy potatoes and the tomato carpaccio. Words cannot describe how packed with flavour the schnitzel is! Expertly brined chicken, and the Caesar salad it came paired with was truly world class. The crispy potatoes with onion burnt onion butter simply have to experienced, if you’d told me they’d be the tastiest potatoes I’ve ever had in my life I simply wouldn’t have believed you (that is, before devouring the lot). The carpaccio really surprised me, as I’m not typically a big fan of raw tomato. The quality of the produce used in this dish was simply phenomenal! Big big bonus for the frankly unbelievably generous quantity of crispy capers on the plate too!
In short, if you’re on the fence about visiting Raymond’s; please do yourself a favour and make a booking!...
