Not just another ice cream sandwich shop!
I honestly have not been impressed with any ice cream sandwiches since I was a child discover I g Dairy Queen or when I found Skinny Cow (I couldn't even tell it was low fat!!!). And yes, I've gone to Diddy Riese, CREAM, and everything inbetween. Well the day has come when I am once again excited for ice cream sandwiches!
I had low expectations coming in even though I was holding my breathe on the inside for a unicorn. They have great reviews on Yelp and the name Cookiebar just sounds like all sorts of awesome...but I've been let down so much before that I was trying not to get over pumped. Before I even walked into the shop, I was already loving the color scheme of the shop awning and the cute sign outside: You can't buy happiness, but you can buy cookies and ice cream!
Hell yeah! This is my kind of store! Once I'm through the doors, the girl at the counter immediately offers ice cream samples before I'm even done checking out the flavors AND encouraged me to try as many as I want. They carry ice cream from both Thrifty and Mitchell's :) After I have gone through several spoons of sampling and pretty sure I knew which filling I wanted, I was struck with a new dilemma of choosing cookie flavors. No problem; she smoothly offers to let me sample the cookies too! Guys, this is like my kind of heaven and I am ecstatic. I'm literally bouncing around with joy. And if that wasn't enough, she offered to warm up my cookies to make them even more chewy. I just fell more and more in love with this store. So much I wanted to buy a T-shirt but they don't sell those just yet.
TL;DR - Just come here and you will leave even happier than when you arrived.

Read moreIt seems like a bunch of friends under 30-years-old got together, put in their money and opened a business that only sells ice cream and cookies. Which is impressive. Why the hell didn't I ever think of this business model? Bitterness aside, the employees here are very sweet.
You can customize your own ice cream sandwich; assembled to order. And with a single scoop of ice cream (Thrifty's or Mitchell's) being $2.50 and the cookies costing $1.25 each, you want the ice cream sandwich for $3.50. You choose ANY two cookies -- Macadamia Nut and White Chocolate Chip known as the Cahootz + Chocolate Chip -- with your choice of ice cream -- Cookies and Cream. Or, the second time I went -- Cookies and Cream cookies and Grasshopper Pie ice cream.
You can choose to have the cookies warm. But, don't do it for ice cream sandwiches. Soft ice cream + warm cookies = cookie milk shake. when I took my first bite and the ice cream separated like roaches when you turn on the lights. It squirted out of both sides, leaving both me and the ice cream panicking; the both of us holding on to the edges of the cookie for dear life. The cookies are buttery and soft, but packed full of crunchy nuts and chunks of chocolate. The cookies and cream gives a whole new meaning to the title, chocked full of cream-filled chocolate sandwich cookie chunks and schmear.

Why did I go: My friend highly recommended this place. So I had to pay it a visit.
Parking: They do not have a parking lot, so you have to park on the street either right in front of the store or in the neighborhood right next to the store. It's an easy walk and so worth it!
Prices: Well worth it!
Customer service: They were super friendly, helpful, and nice!
Food selection: They have a good variety of ice cream flavors to choose from. You can either eat the ice cream by itself, or you can have your choice of ice cream flavor placed in between your choice of two huge cookies. They also have a good variety of cookies to choose from.
What did I order: I ordered matcha ice-cream and double chocolate chip cookie. It was so good!
