This was the saving grace of staying at Live by Leow's. We were able to have a walk in early dinner our last night in the hotel. The service was good. The portions were generous, so be careful what you order for sides because they are family style. We had a manager stop by our table and check on us after we had some shell left in our oysters. The food was good, better than good, it was great. We had oysters, and a tuna tower (which I highly recommend) as appetizers. Then we moved into the main course. I had the delmonico, medium rare, with exotic mushroom (local yellow oyster, king oyster, blue oyster mushrooms mixed with your standard mushroom) and a three cheese mac & cheese. The steak was really nice, but it needed another minute on the fire. Once I got to the thicker end of the steak, it was rare. The mushrooms were good but needed to be cooked with less oil. Oysters mushrooms taste way better cooked with a little butter and crisper. The mac & cheese was pretty good. They sprinkled bread crumbs on top, which I love. I just wished they would have thrown it under a broiler for 30 seconds to toast the bread crumbs on the Mac & cheese. My wife had the lobster, scallop, prawn, scampi, which was huge. It came with toasted bread, and she ordered the brussel sprouts. Again, not realizing these were family size. So we had a lot of food. I have never had a scampi in a tomato base. We were both surprised when they brought it to the table. We were expecting a normal butter based sauce on sautéed scallops, prawns and the lobster tail. It was good though. The scallops and lobster were about 30 seconds over cooked. They were just on the verge of being chewy. They were good, and she enjoyed them. If you visit, do yourself a favor and start with the fungus mushrooms. This dish was an absolute standout! It’s a generous portion, easily enough to feed four people, and each bite is packed with flavor. I’ll admit I was shocked at how delicious and unique they were—rich, earthy, and perfectly seasoned. These mushrooms are a must-try before anything else.
For my main, I tried the bison sirloin for the first time, and I couldn’t have been happier. Cooked to a perfect medium, it was moist, tender, and bursting with flavor. Unlike what you might expect from bison, it wasn’t gamey at all—it was simply delicious. Cut and Bourbon knows exactly how to prepare it to perfection.
The crab cakes were another hit, light yet packed with fresh crab meat and just the right amount of seasoning. However, the real surprise of the night was the Brussels sprouts. They were easily some of the best I’ve had in the entire DFW area. Crispy, flavorful, and perfectly caramelized, they’re a side dish I’ll be dreaming about for weeks. Trust me—you won’t regret ordering them!
The ambiance here is perfect for a date night—intimate, cozy, and sophisticated. At the same time, it’s a fantastic spot to catch a game in style. If you’re visiting during football season, you’ll love the incredible bonus: the large Texas Live outdoor screen is directly in plain view from inside the restaurant. From the moment you walk in, you’re met with a warm, stylish atmosphere—and one of the most unique features: the bourbon lockers. Patrons can purchase their favorite bourbon through the restaurant and store it in personalized lockers, complete with a brass nameplate. When you’re ready to indulge, your bottle is unlocked and brought to the table—a classy touch that sets the tone for the evening.
For dinner, I went with the Cowboy Ribeye topped with lump crab, cooked to a flawless medium rare. The steak was beautifully charred on the outside, perfectly pink with a warm center, and bursting with robust, beefy flavor. The addition of lump crab took it over the top—decadent and rich without overpowering the meat.
We paired the entrée with two standout sides: the crispy Brussels sprouts, which were seasoned to perfection with a great crunch, and the scratch-made mac & cheese. Creamy, cheesy, and indulgent, the mac & cheese could easily stand on its own as a meal. I sipped on the house Old-Fashioned, which was smooth and well-balanced—my only regret was not ordering it smoked, which I’ll definitely do next time.
Despite being completely full, we couldn’t resist the five-layer carrot cake for dessert. Unlike most dense versions, this one was light, moist, and layered with rich, velvety cream cheese icing. It was so good, I had the leftovers with coffee the next morning—a deliciously unconventional breakfast before hotel checkout.
Cut & Bourbon is the kind of place that’s just as perfect for a date night as it is for impressing out-of-town guests. I’m already looking forward to my next visit, especially to try their brunch—I’ve got my eye on the chicken and waffles.
