Sushi-ko, the new take-out sushi restaurant on Bainbridge Island, is a breath of fresh air, as is its hard-working, straight-shooting, US Marine Corp veteran owner and second generation sushi-maker Jennifer Blevins. If the story behind the restaurant (featured on their website at sushi-kobainbridge.com) doesn’t steal your heart, the deliciously prepared food, generous portions and fair prices will. For an encore, when I swiped my credit card to pay, no tip screen appeared on the point-of-sale device. When I ask Jennifer about that, she remarked softly and earnestly that people shouldn’t have to tip on take-out orders, and that in Japan tipping doesn’t exist at all.
