UPDATE (8/5/22):
Everyone is entitled to a bad day. Acknowledging and correcting is worth commending and I commend the gold standard for showing up. Chef inspired me tonight. The palate opener was a more beefed up salad than the first time, bright & crunchy. First up, the japanese flounder in a truffle ponzu which was exquisite, followed by a japanese inspired chicharrón, crunchy yet light & airy. AND then we were graced with a healthy size blue point oyster garnished with Hokkaido Uni which was reminiscent of the sea on a bright blue bird day. I won’t name every piece of nigiri but today i was not only impressed but overjoyed at the creativity, diversity, and hospitality that the Gold Standard displayed. NOT A SINGLE REPEAT! the closer: A5 wagyu meatball topped with caviar all held together by o-toro, my god, the glory. Water glass stayed full, chef was graceful and attentive. The hostess was very hospitable and ensured that before our cocktails were empty, another was en route. Our mini plates of ginger never ran out. The Mochi, now priced at a reasonable 12$, were a perfect end to a wonderful evening. 10/10 - i would recommend, highly. bravo 👏🏼
ORIGINAL REVIEW (06/25/22): If this rating could be out of 10, I would rate this meal a 7. The fish is fresh, the rice is cooked perfectly and the proportion of fish and rice is ideal. However, I could not have been more bored. Admittedly, I have insanely high standards when it comes to Omakase. I’ve been to Japan, I’ve dined at the finest Omakase in NYC and Here in Miami nothing beats Hiden. This place falls pretty short. Total lack of originality, you get the same fish a few times over, not a fish i didn’t recognize and could easily obtain at any local sushi spot. Everything is torched, literally more torched sushi then raw fish. The flavor profile of almost every nigiri was sweet, obvious when you’re constantly caramelizing everything with a torch. Typically after every piece you get a wipe so as to have a fresh dish for every course, that didn’t happen and it was a big ding for me. Service was sub par, my water glass remained empty for most of the meal, and i had to often ask for a refill of water. They never cleaned the table or wiped anything down, they didn’t fold the napkins when you leave for the bathroom, it just was really mediocre service for such an expensive meal. They tout a 15 course meal but frankly i wouldn’t consider a frisée salad with 5 pieces of lettuce, a course and they did. Also, Gold Standard doesn’t include desert - you have to pay 18$ for 3 pieces of mochi, that’s 6 dollars per mochi friends. I wish i would have taken photos so i could confirm my suspicion that it wasn’t actually 15 coursed but i can’t say for sure. All i can say is that i left hungry and wishing i spent 500$ elsewhere. After the incident we had in Valentines, the owner Bill got in touch with us and offered us an apology and an invite for dinner on them.. not only was everybody so nice and the attention amazing, but the food was amazing. Each dish was perfectly crafted and the flavor were their. The quality of the nigiri’s was amazing, the dissolved on your mouth. Really this places was everything and more than what we expected, the mood between the music, the food and the service was perfect. I would really recommend this place, and hopping on going back soon. It’s a different vibe from a regular omakase, but the product is their.
We were really excited to try this place. We booked through Dorsia the first time, and had to move the date because of a private buyout. After moving the date to the next day at 7:00 pm, we arrived at 7:00 pm at the restaurant as it said on our app. The lady at the reception told us that our reservation was at 9:00 pm, and that it was not her problem and to check it with Dorsia. She was really rude and she would not even talk to us, at any point during the hour that we were there waiting did she come talk to us. The vibe and food looks great but if they are mixing up the reservations the least they can do is treat well their clients. Really bad service. If she would have treated us better we would have gladly waited...
Read moreI recently had an exceptional omakase dinner with my mother that I just have to share. From the moment we walked in, we knew we were in for a treat. The entrance itself is a secret door that looks like a bookshelf – super cool!
We started at 9 pm with 8 people. The atmosphere was fantastic, with old-school hip hop playing in the background, creating a unique and enjoyable contrast to the professional vibe of the whole setting.
Chef Ruben was amazing – not only is he incredibly skilled, but he’s also funny and passionate. He explained everything so well, making the whole experience educational and fun. The fish, which all comes directly from Japan, was out of this world.
The portions were perfect, and we left feeling full and satisfied. The sea urchins and the tuna rolls were a highlight, especially the different pieces of tuna from the same fish, each with varying fat levels. It was a true culinary delight. Everything we had literally melts in your mouth like butter.
