I can not sing enough praises about Carvers! This small locally owned upscale eatery never fails to delight with their salad bar and team of gauchos,led by Bruno, who serve the best meat (and glazed pineapple) in Billings! First, the salad bar is massive, endless options of any salad you could think of in addition to including deli meats like procuttio and aged parmesean. Next is the hot side bar, including a delicious soup (in the past they've had lobster bisque and broccoli cheddar), Alfredo pasta, mashed potatoes, Yucca, Plantains, Rice, Pot Roast, Brazillian Cheese Bread (pao de queijo) and even French Fries for the kids. Next comes the meats: Top Sirloin, Ribeye, Tri Tip, Lamb, Chicken wrapped in Bacon, Parmesean Beef, Shrimp and must more! The must try, though, is the Glazed Pineapple! I am not a pineapple guy, but the way they glaze the pineapple with that touch of cinnamon sugar and all grilled to perfection is just flawless! By far the best item coming from the gauchos! Each gauchos is extremely professional and well dressed. Chris and Rene are amazing and even came by to ask us what we would like more of once we tried everything, and promptly came back to serve us!
In terms of drinks, you must go with the Pina Colada (that includes the virgin one for the kids)! It comes in a hallowed out pineapple and takes right to the beaches of the Caribbean with every sip! Carvers is the perfect restaurant for a birthday, anniversary, meeting with a buisness client, or company outing like the one we just had. The best time to visit is during lunch and would recommend everyone consider having lunch here.
A big shout out and thank you to General Manager Bruno who knows how to treat his customers right. I have never met a more friendly, empathetic, and caring manager before in my life. The people of Carvers truly care about the customer experience and will go out of your way to make your lunch/dinner a memorable occasion! (Chris even went to go look for an IPhone charger when my colleagues phone was dying). I am forever thankful for their generosity and their willingness to share the Brazillian culture with the people of Billings. I will soon be returning to Carvers...
Read moreI’m not normally one for writing reviews but I am a firm believer in giving credit where credit is due. This restaurant and our server deserves five stars. A young man by the name of Cruz was our server for the evening. I have been hearing a lot of hype about carverss and I am happy to say it didn’t disappoint. The meats were very good they were tender and juicy as I like them. I like my meat about medium, medium rare but they were a little under cooked for my preference, so keep that in mind if you go. Sides were delicious wide variety something for everybody. I’ve heard some reviews complaining about the meat portions But I’m happy to say our family received a generous amount of meat and if you would like a little bit more, don’t be afraid to speak up but don’t get greedy. I really enjoyed the fact that they have a drinks for all ages selection. The atmosphere was fun, fancy and loud my family and I can be outgoing at times so I was happy that we didn’t feel like we had to keep it hush hush in such a fancy restaurant. Was a little pricey, but that was to be expected.
As for our server he was very attentive, always making sure our drinks were filled and that our food was to our liking. What made our server stand out was that he seemed very knowledgeable with the menu and explained all of our menu questions with patience he gave us some recommendations that we really enjoyed. He was fun and outgoing, he made the experience all the more personable and enjoyable. Unlike a lot of other servers nowadays, he didn’t give off the impression that he was just there for a paycheck he seemed happy and like he enjoys what he does. I always say the impression you get from the server makes all of the difference from the experience you get when dining out and this dude rocked it. Very professional, young man. Overall wonderful first experience. We sadly didn’t get to try a lot of the drinks because we got full. We were recommended to come in again to try out the bar so me and my wife will be back in and are looking forward to our next date night.
10/10 would recommend and worth the money.

First off let’s just talk about the amazing, decadent, delicious variety of perfectly cooked meats and this unreal cooked, yes COOKED, cheese with honey drizzle 🤤everything was cooked to perfection, tender as ever. The flavors? The flavors were like nothing I had EVER experienced and are like explosions in your mouth with EVERY bite. The salad bar is included in “The Experience” and was beyond anything I could have imagined.
The atmosphere was like being ripped from your reality of living in Billings Montana and puts you straight into a beautiful Brazilian restaurant experience where “carvers” bring you slabs of meat on skewers and offer you portions of everything from the kitchen until you tell them no more, which happens but you can’t seem to stop eating.
The servers are amazing, kind, professional individuals with personalities just as such.
A special shout out to the one carver in particular, Jeremy. This man laughed with us, made us feel more than welcome and was very informative on what meats were being offered up. His personality was inviting and we will be back solely because of how wonderful he made our experience.
Another special shout out to Jestin the server. This man made sure we were taken care of the ENTIRE time we were there and brought us the best dessert I’ve ever tasted before in my life called Flan.
