Hana Sushi is a gem of a neighborhood spot in Bothell that always delivers a solid sushi experience. It’s cozy, welcoming, and has the kind of vibe where you can tell they’ve got a loyal following of regulars - and for good reason.
We made a same-day reservation for dinner, which I highly recommend since it gets pretty busy in the evenings. The staff was friendly and attentive throughout. If you sit at the sushi bar, you can have a fun view of the chefs in action.
We ordered three rolls - the TNT, Main Street, and Paradise. The TNT was the standout for me because of the flavor and right amount of spice. We’re big fans of salmon nigiri, so we also got six orders (yep, 12 pieces total); it was fresh, buttery, and absolutely delicious. Prices for full rolls are right around average for the greater Seattle area.

Ironically, now that the sushi is made to order, it seems like their sushi's quality has changed - for the worse. Let me explain. Sushi rice (and NOT the fish) should be served somewhere between room temperature and body temperature, every sushi connoisseur knows this. Since Hana no longer prepares sushi for their since-abandoned conveyor belt, the rice doesn't have time to acclimate to ambient temperature before someone consumes it. And now, their sushi rice comes directly out of a Sub Zero refrigerator, stored way too cold, affecting the Sushi experience.

The lady said “chef’s choice.” I asked what comes with “chef’s choice” and the lady said “things like salmon, tuna…;” I asked if they could just do salmon and tuna and they said no. I asked if I could pay $2-3 more and just get salmon and tuna, and they said no. Looks like I was stuck with the “chef’s choice.” They said the food will be ready in 40 minutes. I show up in 40 minutes and they quickly take my money and then the wait began. The sushi chefs put out sushi like a powerhouse for the people at the restaurant who likely ordered after me.
