One of my favorite place to eat in the winter. Their crossing the bridge noodle is perfect to warm you up when it’s cold outside or if you’re feeling under the weather. I always get the make your own. It comes with small variety of veggie and some beef slices (you can see the exact amount in my pic). The noodle is really soft and yummy. I tried the green pepper, pickled pepper and original broth. My favorite was the green pepper. The pickled pepper is the spiciest they have and reminds me of ramen broth a little bit. Basically they bring you a huge earthenware bowl of hot soup with all the toppings and noodles separate. U have to add everything within ten seconds or the whole thing will fail. jk... Read moreI am a Chinese I've been tasted many rice noodle in China. As the competition is not at all serious here in Dallas, the food quality is way behind.
The soup(or broth) is very important element for a rice noodle. A good soup needs to be cooked with ingredients to reach the point that all the flavor are melted into the soup itself. A good soup becomes sticky and thick.
However, I tried several times, their soup doesn't reach the expectation. I am 80% sure that soup is made from some kind of instant powder or sauce. It looks right but can't cheat my taste buds.
But like I said there is no competition here. So it's a blessing thing to have something eat...
