Indo-Pak restaurants with lunch buffets that charge reasonable prices are plentiful in the NC Triangle area. After a very disappointing experience at The Wild Cook's Indian Grill, I didn't want to leave the Triangle without having one good Indo-Pak meal.
Everest Nepali Kitchen was in its first week of operations, and it only had one review when I was considering it. I ultimately decided it was worth a try because of the incredibly beautiful pictures.
I walked into the restaurant and was instantly thrilled. The pictures almost don't do the food justice. Even on their lunch buffet, all of the dishes looked incredibly appetizing. I was downright ecstatic. The number of available selections on the buffet were above average for Indo-Pak restaurants, featuring Goat Biryani, Mixed Kabobs, Chicken Tikka Masala, Chili Chicken, Pakoras, Samosas, and a multitude of other dishes. There was even rice pudding and mango juice to satisfy your sweet tooth at the end of the meal.
I am incredibly pleased to say that all of the selections featured unique and distinguishable flavors. I enjoyed everything that I tasted. I think I was most impressed with the Chicken Sekuwa, grilled chicken with Nepali spices. The Chicken Sekuwa dipped in their house made mint chutney was simply transcendent.
Service was terrific throughout the experience. The server paid careful attention to our table and was able to easily answer my questions about the food. I regret only having one stomach to eat their delicious food.

We ordered the Chicken Garlic Kebab takeout, which is something we've ordered from them very often in the past. For some reason hadn't ordered from here in several months, and boy were we in for a disappointment!
To begin, we noticed they have raised prices significantly. That's somewhat par for the course everywhere these days so we didn't really read too much into that, even though the increase did seem much steeper then we'd have guessed. But when we actually opened the food, it was an instant disappointment. For one, it looked completely different than it used to in the past. They used to have a clay oven baked roti as a sort of a container for the e kebab that made for a really awesome accompaniment. That was completely missing. But the biggest disappointment was the shockingly tiny portion size. We distinctly remember eating this for dinner and having enough left over for an equally awesome lunch next day. This was barely enough for one meal...for one person! I have to say the portion size was legit halved. Coupled with a price increase and an inexplicable modification in the dish itself, I'm not sure what to make of this experience or if we even need to consider ordering from here again.

Everest has been a local mainstay amongst one of my core friend groups for months at this point. Every time we go, the atmosphere and service are both comfy and professional. The food is always incredible, and for the price range it's hard to beat. They offer a wide range of dishes, and for each dish one can choose any spice level from 1 (very mild) to 10 (extra spicy). Having tried much of the menu at different spice levels here, I can confidently say that it's hard to go wrong with any choice.
We, as a group, typically dine in, but for this round I opted to do carryout through their online order system. Pictured is a bit over $60 (at time of writing, including 10% takeout tip) and includes three lunch specials and one appetizer. For this price point, I snagged the Chana Masala, Butter Chicken, and Nepali Traditional Khana Set (Vegetable) alongside an appetizer of Samosa Chaat, which is my personal favorite here. Each dish, alongside the accompanying Papadam, is packaged carefully so as to preserve the quality of the dishes and prevent spills (I had removed it from the containers containing liquid here, but each had been carefully covered with Saran Wrap).
