This was by far the worst Cafe Rio in Colorado. The teenage boys working were extremely overwhelmed and disorganized. The emo looking kid with the black hair had a really bad attitude I assume cause of the overwhelming amount of people with their absolutely misbehaved kids running all over the restaurant. He was slamming the spatulas and serving spoons around slopping food around. On my first burrito he gave me a ripped up tortilla. Then the next one he forgot even even make and started moving on to the next person I had to remind him he still needed to make my second burrito. The next one which was suppose to be the same thing as the first was a mini burrito that I couldve bought at King Soopers in the freezer aisle. He put minimal everything (rice, beans, meat and cheese. Like teeny tiny little scoops they he threw all over the place. Completely forgot the corn salsa I asked for. Put a pinch of cheese on top. I made the next young kid put more cheese on top without remelting. I asked for sides of green chili and Pico they made it then lost it I had to tell them to get me more so they only grabbed the green chili I had to remind them again to get me Pico three times before they figured it out. This entire situation was very time wasting and irritating. Get more staff scheduled and coverage on busy days.

Read moreI ordered take out last night, and was nothing but disappointed from the get go. When I went in to the restaurant to grab my food, there was a noticeably irritated long line of people. I was thankful I had ordered ahead, so I happily grabbed my food and ran back out to my car. The bag didn't feel right, so I looked at everything and immediately noticed they hadn't included the dressing. I ordered a salad and paid extra for extra dressing, so it was something I absolutely had to go back in for. I was never acknowledged by a single employee, including some guy who appeared to be a manager, who was running around (addressing no one) and talking on the phone. The people who were trying to pay at the register were very upset, and even mentioned their food would be cold. Not a single apology was uttered to them, and it was so frustrating to watch. I waited for 10 minutes before I could get someone to bring dressing. When I got home, I was only more disappointed - brown guacamole and mushy pico were in the side in containers. The salad wasn't made the way I had ordered it, and the tortilla that it usually comes in was just excluded completely. Depending on when you come, the restaurant can be pretty busy. That’s a good thing after all! Who wants to eat at an empty restaurant!?
What we enjoy is the consistency in quality and service we get every time.
The food is always fresh and because of the popularity it stays fresh throughout the day.
Everything is prepared here at the time it is served.
We’ve probably tried everything on the menu and never been disappointed. Our favorites are the chicken and pork salads. Today we also got a kids quesadilla to hold us over u til we could get to enjoy our salads and that was absolutely delicious too!
Given the flexibility to add what you want you can make your meal vegetarian or gluten free also.
The staff is great and they all work hard and fast.
This location has an outside seating area, alongside the inside, air conditioned salon. It’s only a few moments off of I-25, so very easy to get to and right next to the Castle Rock outlets in case you need anything else to do.
