Having been to many steakhouses over the years, and knowing there were none within CR, we were so exited to see an established restaurant move into town. Unfortunately, after 3+ years of ‘renovations’, this is not what you would expect in a prestigious steakhouse. Details are so important when you name your establishment ‘The Famous’. From the outdated and misguided decor, the dirty original carpets, the used table tops without table covers, the old and unfinished paint jobs, the mirrored walls from the 80’s, you would have thought that the building hadn’t been rehabilitated at all. The atmosphere was stale and unappealing. That being said, the service was great, polite and attentive. I didn’t see a large wine wall, but after seeing other reviews, it seems the list is good, if not great. The carpaccio and Maryland Crab cakes apps were very very good. The rosemary sourdough bread is delicious. The filets have an excellent cook to them, however they lack seasoning badly. There was no sear or flavor to them. The blue cheese topping is not crusted and almost seemed like an afterthought put on the top of the steak as it was being brought out. The au poivre sauce is strange. It’s almost got some type of vinegar or barbecue flavor to it when you would expect more of a peppercorn taste to that type of sauce. The scallop potatoes were decent. However there’s too much habanero in the sauce for those who don’t like spice and the potatoes were over cooked. I think the ‘bones’ and the concepts are there for this restaurant, but it is not cohesive or executed very well yet. The restaurant absolutely has potential, and I definitely want it to succeed, but for it to be considered a high end steakhouse, they have a long way to go. You can go 30 minutes north or south on I-25 and probably find 10 other actual real steak houses that far exceed this one. I’m hoping they can react and put some necessary finishing touches on what they have already created. Finally, the prices are relatively high. For almost $350 for dinner for 2, I would’ve wanted something that was outstanding. There is a $240 steak on their menu, and if they want patrons to come from miles and miles away, they’ll need to make a lot of changes to draw them in. That they are busy ( short staffed)and she will clean a table for us on the first floor by the bar. I asked her what’s the point of making reservations she said “ well we got very busy and all of our tables are taken , if you want to seat at the bar area you can “ if not basically you can leave. That was her attitude. The place was completely empty downstairs not sure about upstairs.
We were seated at the end corner by the bar at a boot for 4 ( that could barely fit 2 people) Ordered drinks looking at the bar tender making the drinks with grabbing ice , oranges squeezed limes on glasses without any gloves or utensil bare hands. Very unsanitary. Ordered salads and does were dissent. Beef carpaccio was bland no seasoning. Then we ordered two filet mignon, one medium, rare, and one medium. The other two steaks were New York strip two medium. We ordered side dishes, mashed potatoes, spinach, mushrooms, and one steak head shrimp toppings. This was the worst food 4 people had in their life. The stakes were completely wrong temperature and the sides were greasy no seasoning cold . The shrimp tasted like it was spoiled. We were hungry and we asked for some bread the it that was probably purchased ( not made in the house ) and that was ok. The server came asked if we need boxes we told him no he didn’t even bother to ask how everything was. We told him that the food was bad and explained everything he just said “ I am sorry “. He didn’t not care. The manager walked by us at least 10 times never bothered to ask how everything is. We didn’t want the money back or any kind of discount. We paid over 500$ and went home hungry. We were excited to have a steak house in Castle Rock but this is a bad place , bad service, bad food and horrible decor. Never ever coming back. Read more-Alright, fabulous people. The service was amazing. 10/5 stars. Seriously great. Honest about what they knew/didn't know, but found out and let me know about what they didn't. Honesty goes a long way in my book, and they did just that. Friendly and on top of any request. Service was top notch. Food was good, but not great. Steak could use a bit more flavor but was helped by a bit more salt and pepper. They were cooked PERFECTLY, but just missing something. Salads were decent, not stellar. Brussels sprouts seriously needed some char.
What killed me is the atmosphere. My profession is commercial construction so I notice silly stuff. For the amount of time this took to complete, it was disappointing. The ceilings/paint/carpet could have been upgraded for the cost of my meal. I just don't understand it. There were drywall patches in the drywall ceilings painted with semi-gloss paint that would have been grounds for firing the person that did them. The HVAC was blowing COLD air at my head, the carpet looked like it was outdated in 93 and the ceilings were a few levels down from basic. The music was very strange. Heard the same song no less than 3 times while I was there. All classic, but nothing within the last 50 years. Good music has been created since Sinatra was popular. A mix of everything would be great.
Can't say enough good about the service. Not a single person, my waiter or otherwise, walked by our table without checking on us. This made our night go from "ok-ish" to GREAT. You've got some great people working there. Work out the finishes, and it's a win.
Value was strange. There's a very good steakhouse with a famous Denver coach's name just up the highway. I could have eaten there cheaper and that place has the complaints above completely fixed.
