I was the only soul in the restaurant, but make no mistake, this was no ordinary meal. This was a private audience with the culinary gods of the Yucatán. Presiding over the temple was a man (likely the owner) whose passion radiated so brightly I half expected doves to descend from the ceiling and form a halo around him.
He brought me not one, not two, but three sauces. Three sauces that deserve their own Hallmark mini series. As he described which sauce paired best with my dish, it was as if Socrates himself had descended to hand me the keys to eternal truth. He was not just serving food, he was conducting a symphony where every note was edible.
The cochinita pibil arrived, and time slowed. Fork met plate, plate met soul, and suddenly my taste buds were riding bareback on a flaming meteor hurtling toward the sun. Each bite whispered secrets of the universe. The love this man poured into his craft was baked into every shred of pork, woven into every hint of citrus and spice.
