They explain their goal for their IPAs at length on their website. As someone who hadn't learned to enjoy IPAs, I found options that I liked at Manhattan Project.
You'll see in my food reciews that I can enjoy scrumptious food anywhere and with any quality of service, but I don't find mediocre food worth the price even if I'm pampered in a castle. I'm new to reviewing breweries, but I've already found that the experience is not just about the drinks for me.
The space inside was beautiful, with high ceilings and floor-yo-ceiling glass panes through which you could see the action backstage. Could use more indoor seating--the outdoor space was also very well organized for groups, but there was no respite from the setting summer sun.
Ample parking in the lot, gets more crowded in the evenings. If you prefer a different sort of eye-opener, you could try something from their coffee menu. The place is pretty kid-friendly as evidenced from all the kids who were present when we went, and it was nice that there were plenty of food options they could enjoy, too.
\ Thai fried chicken, two piece I have no idea what Thailand's take on fried chicken is like but this one is delectably crunchy on the outside and juicy on the inside comes with a leg and thigh, appreciated the tasty dark meat, plenty of meat despite the bones the batter is gluten-free! light and airy the wings can be tossed in Thai chili sauce (mostly sweet, not spicy at all) or Buffalo (I think??)--clearly it was a no-brainer get the nam jim--which apparently just means "dipping sauce" in Thai--for an additional complex refreshing complex citrusy kick comes hot and fresh and made to order
\ truffle fries arguably the best thing I tried all night the edges and corners of each fry reminded me of the first tome I learned the definitions for those words--they were so well-defined and crispy these days truffle might have been a little overdone, a little overwhelming but not this one! the fragrance speaks of a reserved chef exercising appropriate self-control
\ sour \ the cherry one wow I don't think I ever learned its full name but it was a fruity sour that makes cheeks pucker tried some IPAs and the rice lager but ultimately returned to my beloved sours
After studying the online beer menu extensively, I came prepared to order the crowd-favorite Half-life or the lighter Redacted, perfect for a triple-degree summer afternoon. The samples I tried of each were tasty, and I certainly intend to get them next time... unless another sour distracts me.

Be aware there is this bearded stickler for “the rules.” We have toddler, he dropped heat in his diaper. I did quick field expedient change in the area next to their production area versus going to bathroom and hoping they had diaper change area. Long way of saying I changed a diaper on an industrial concrete floor in under 1 minute. Got corrected by “the rule enforcer” they have baby changing area in bathroom. Ok, will take on chin. This one very much will take on chin, though I was trying to be quick.
We are here for friend’s birthday party up from Austin. There are stacks of 24 can cardboard containers lying about. We grabbed two to use as birthday cake plates. The Stickler tells us we should have asked for shared plates from them after we had cupcakes already cut on them. #sigh. Pick battles.
While driving home, apparently same dude made a correction that our toddler couldn’t play with his cars at a certain place on the floor.
While technically correct on both points l, humbly admit, he was 100% correct (on unwritten unpublished rules) 1) assume the positive intent, 2) pick your battles, 3) give some grace of seven adults with four kids under two just trying to keep them in check and have some sort of semblance of a fun afternoon and not annoying your other patrons. Went from fun time to now just irritated. In end, just want to tell dude, “Chill bro.”
My friend noted 90% of employees have beards. Fact. Don’t know how else to describe him. Beard and grey on tops, Hokas, black plaid shirt. He wasn’t mean or malicious, just lacked EQ and judgement over what and when to enforce unpublished...
Read moreThe aesthetic and decor of this "brewery" is very clean and modern compared to most breweries. However, beer seems to be a tertiary focus compared to the other elements of this establishment. Upon walking in, you immediately notice the espresso machine and other coffee related items before the brewing equipment, or even the taps. The white marble and minimalistic decor definitely supports the concept of a coffee shop. They also have a small food menu that includes arepas. I had the salmon arepa which was delicious. Sadly, that concludes my positive experiences during my visit. My fiance and I sat at the bar since we like to converse with beertenders about life and beer. However, the employees seemed too preoccupied talking with eachother and disinterested in working to engage in conversation. Despite the fact that there were numerous employees there, to the point where they were talking about sending people home or cutting shifts short, it was nearly impossible to order another beer or even get the attention of someone there. When we were able to get service, it was curt and seemed to be a chore. A large experience of breweries is having your staff know their craft and be able to have open discussions with customers, especially those who may not be so well versed in beer. Customer interaction did not appear to be something that these employees were trained in, which was incredibly disappointing. The beers themselves were okay, but nothing to write home about.
