This was my first all-you-can-eat a5 wagyu hot pot. I know that sounds unheard of but it's a real thing, and I can assure you that it is as delicious as you would think. If you were like me and never had a wagyu experience, then this is it. My girlfriend and I started off the night walking through a snowy road and entering Chubby Cattle to be what reminded me of entering a common restaurant in Japan; I absolutely love the feeling of an immersive experience and this did it for me. We were treated to a beautiful center area that the chefs resided in and the host was extremely polite. Throughout our whole dinner experience, our waitress was extremely kind and informative on how the menu works. I don't remember our waitress's name but thank you if you see this. The food came out in such a cool way, if you sit at the center area there is a delivery system that comes out on a conveyor belt.
THE BEST: and by far the food that I was looking forward to most was the hotpot A5 Wagyu ribeye cap. First of all the cap of a ribeye is the most tender piece and to get an all-you-can-eat ribeye cap of A5 wagyu, that's a steal. I was at first worried that maybe they would bring out prime grade short rib because of the intense marbling of the cut, however, this was the real deal. As you can see from the picture I posted, the marbling is not a lie, the heaven is in the details. For the taste, just absolutely wonderful, you can quite literally feel all of that marbling melting inside of your mouth and the buoyancy of the meat is something to die for. It is an experience like I have never had before and I absolutely loved it.
THE GREAT: My favorite sushi is saba, not everybody likes it but I am an absolute fan of the taste and texture. So when I saw the grilled saba on the menu, I got it first. There should be a video of the saba that I uploaded, I'm not sure if it is uploaded but it was cool. The waitress brought out a torch to toast the saba for us. The flavor of saba is intensified after it is slightly cooked on top. By the way, saba is translated to mackerel. The Takoyaki is exactly how it should be, I have had decent takoyaki before but this restaurant does it right. The perfectly gooey inside and crispy outside with the bonito flakes and all is amazing. It is a perfect appetizer for the oncoming hotpot and sushi, just loved it, and reminded me of my trip to Japan a while back.
THE EYE OPENERS: Something that I really enjoyed was the Salmon/Tuna/Yellowtail Tartare Waffle Bites. They give you a large amount of tartare on top of a waffle fry and it is surprising to see a mix of American Culture and Japanese culture come together. It was almost like these two were meant to be. I would highly recommend giving it a try, especially if you are doing all you can eat because they hook it up. I also loved the King Salmon role because of the sheer amount of salmon they put on top of it. It has a delicious refreshing sweet taste to it and I will be getting it again when I go.
CRITICISMS: As my girlfriend and I were having dinner I noticed that it did take long waiting times inside of the restaurant when I ordered for food. There were also times that I was worried that I wouldn't have ordered enough by the time I got out because I wasn't feeling full about an hour in. But by the time we did get out I was insanely full and feeling pretty darn good about my experience. I'm coming back 4 years later to update my review of Chubby Cattle Denver. Ever since they first opened, the quality of the food has been deteriorating each visit I make. Unfortunately the fresh amazing sushi fish seems to be no longer there and instead I was being served what seemed to be lower quality and sushi fish that was kind of old.
I loved going to Rolls by Chubby Cattle every year for my birthday until I started noticing the sushi wasn't tasting as good. The hot pot remained fine, but I wasn't only there for the hot pot. I think the hot pot is still great, but for the price, I believe there are other places in Denver that do it a lot better.
However, I still think there is a nice charm to Chubby Cattle, and that is the atmosphere and interior design. It's a nice place to go with friends and I do think it's still cool to see the Wagyu certification from Japan. I always appreciated the affordable wagyu options here. I also really appreciated the staff there and they were always the nicest people.

P.S. The parent company, Chubby Cattle is experimenting with using NFTs as a sort of VIP experience at other locations which might be received with some backlash. I hope this does not come to the Denver location.
Old Review Below (4 yrs ago) ★★★★★ "Rolls by Chubby Cattle is a corner all-you-can-eat eatery that focuses on sushi and hotpot/ramen. For $32 (dinner price) you have access to their whole menu as well as the conveyor belt which is always full of various sushi. The lunch price is much cheaper, I believe around $24 and I hear it's just as good. They also offer an a-la carte dining option for smaller eaters, but if you're hungry, the unlimited option is very worth it.
Service: The service is phenomenal. They're always attentive and at the ready to take your order whenever you want more food. They'll help you with the process as well for first time guests. Shoutout especially to Boris for being a great waiter and nice person every time I am there.
Atmosphere: It's very cozy with aesthetically pleasing asian decor. On one side, you have conveyor belt bar sitting and the other side are sit-down tables. There's a rail car that delivers food alomg the conveyor belt, though it wasn't running the last time I was there perhaps because it was busy. All in all it's like stepping into a little piece of Asia, a wonderful contrast to the hustle and bustle of north Broadway.
Unfortunately, during my second time here I noticed the tuna and salmon sashimi quality was not as good compared to my first visit, but I figured it was due to possibly being close to the next fish shipment. It didn't dampen my experience though because there's so many other options to choose from! However, I probably should have said something.
With all that being said, Rolls by Chubby Cattle is a new business here in Denver. I think they are off to an amazing start and have wonderful potential here in the city where sushi is becoming more and more popular! I already know that this is my new favorite go-to place for sushi and I'm sure it will be any sushi enthusiast's future favorite as well.

Read moreMe and my friends went here a week ago and the service to start was awful. We walk in the door right at 5pm and try to join their wait list on their iPad that they require you to do. After hitting submit multiple times it kept popping up an error message that we couldn’t join the waitlist. We then stand there for 5 more minutes until someone finally acknowledged us and asked if we joined the waitlist in a very rude way. Remind you the restaurant has maybe 5 people in there with many tables and bar space open. It was an inconvenience to him that we were there I guess, later we also found out this is the owner….
We then proceed to sit down to eat and the wait staff explained the process of how to order to us very well and we proceeded to order. When we got to the sushi roll part me and my partner tried to order the same roll and the wait staff/owner told us we couldn’t do that even tho it said no where in the menu that we couldn’t all order the same thing. We then order nigiri and you can only order 2 pieces a time per person. We waited 10 minutes for these first two pieces which was fine considering they were getting busier, but we then ordered another set of two each and it took over 40 minutes to get this order. We then asked the owner where it was and he began to argue with one of our party member that it was coming and we had to just be patient, even tho one of the staff later told us our order was not placed by him and essentially lost. This was ridiculous considering it’s a piece of fish on rice that takes very little prep. The sushi belt also had very basic sushi with mostly the same stuff that they just add a couple different sauces or maybe a random tuna to switch it up but otherwise the sushi was very basic and all very similar to each other.
For a hot pot place this place is good and could be worth it for maybe 25.00. But the fact they sell it as a all you can eat sushi and hot pot is a lie. Sushi is very low grade and slow to get to your table and the hot pot is good but not good enough for 40.00 a person. Especially when that’s mostly all you are getting since the sushi seems to take forever.
Definitely will not be going back and the biggest upset was realizing that the waiter/greeter was actually the owner. He should not be in an owner position cause he has no people skills...
