On Monday, my daughter and I had a late lunch/early dinner at Happy Pho. I have enjoyed Vietnamese food, in Vietnam, during multiple trips. I've had Vietnamese food in Dallas, Vancouver, and California. My close Vietnamese friends owned/operated several of the best restaurants. I believe I am qualified to say: "Folks, we are so fortunate that a 'top notch' restaurant has finally come into our SW Littleton community. When you visit Happy Pho, be sure to try their Imperial Cha Goi (spring rolls) filled with shrimp/pork, crafted in the most delicate wrapper, and fried to perfection! Monday, we ordered the steak and brisket pho; the broth (a true test of a quality Vietnamese restaurant) was exquisite with flavorings that were well balanced. All the traditional toppings were provided -- fresh lime, bean sprouts, basil, chili peppers, and even "ngo gai" (a wonderful green cilantro leaf that no bowl of pho should be without)! We can hardly wait to return, and we're already planning a holiday group...

I got the bun bo hue which was awesome, and my boyfriend got a veggie+tofu dish with noodles, they had a bunch of veggie/vegan options which is great, a lot of places only have one thing. I'm from the east coast which sort of notoriously has worse Vietnamese food than the west coast, and really haven't had bun bo hue this good since I was living in Portland. It came with great accoutrements- lots of diverse herbs, and shredded banana blossom, which is an ingredient I never see on the east coast. Also great portions! What excites me the most is the opportunity to explore more of their menu and craft additional reviews. Happy Pho offers a variety of options I've never encountered on any other pho menu, making each visit a culinary adventure.
