When you’re in Denver and are looking for an authentic Texas style bbq joint definitely consider Post Oak BBQ. They named it Post Oak because that is the type of wood used in central texas style BBQ. They have it shipped over from Austin to get that specific flavor profile. They have won a bunch of awards for their bbq and it’s warranted. I personally think it is as good as the barbeque I get in texas. They were serving beef ribs when I was there, so I couldn’t pass that up, but also wanted to try the brisket. Since I was the only one eating I didn’t want a full half pound of brisket, so I just got a bite. The beef rib was good, but if I go back I’d just get the brisket. It was a really flavorful prime cut from goodstock, which is actually run by Nolan Ryan. It had the perfect amount of salt and pepper, tender and moist. Don’t get me wrong, I loved the beef rib, I just wish I had two stomachs. I also got a pulled pork sandwich and a pork rib. You tune in for honesty, so I have to say the pork didn’t blow me away. They do add some sauce when they pull, but I feel like it also needs more rub on the inside and more bark on the outside. For sides, I got the Jalapeno Bacon Mac n Cheese and Elote. The Mac was great. Rich, creamy and spicy. I wasn’t a fan of the Elote. If you get the Mac, you don’t really need the elote as they are similar in flavor profile. I’d probably go Texas caviar if I return. So, if you decide to go to Post Oak, get the brisket, mac, caviar and call it good. As an aside, if Post Oak happens to see this video, I highly recommend getting the line guys some cotton gloves and a cut glove. They were trying to pull the pork with only nitrile gloves and it was too hot. I’m hooked. Post Oak Barbecue is officially one of my favorite restaurants in Denver.

I strongly recommend coming on a Saturday or Sunday and ordering their beef ribs that are sold by the pound on the weekends only. Yes, these ribs are a bit pricey, but they are WORTH IT. The beef ribs are $35/pound, and for us this meant two of the smaller ribs coming out to 1.3 pounds. They also have larger rib bones, but since I was sharing with my mom we wanted to have our own. I loved the flavor on the beef ribs, and I felt they were good as-is, and didn’t need any additional bbq sauce from the containers on the table.

For sides, I recommend both the crispy Brussels Sprouts ($6) that are mixed in with a spicy aoili-like sauce, and the Jalapeno Cilantro Coleslaw ($5) unless, of course, you find cilantro tastes like soap.

If you’re getting the USDA Prime Angus Brisket ($15.50 for half a pound, $31 for one pound) you can choose if you want fatty cuts, lean cuts, or a combo of both. I went with the combination so that I could truly taste the difference, and I got 2 fatty and 2 lean pieces with the half pound order. I personally felt the lean cuts still had a good amount of fat on them, and the fatty cuts were too much for me personally, but the gentleman working there taught me that the fattier pieces are better for if you’re planning on reheating it later.

The staff is friendly, helpful, and embodied hospitable. I love how, right when you walk in the front door, you get to see them passionately cutting and weighing the meat. If you have questions, they’re eager to jump in to assist. As you wait in line to order, you can peer through the glass to see the magic happen.

After you’re done ordering, the pickles with fresh dill, silverware, and water are all self-serve.

It’s a very laid back and comfortable space on a charming street in Mountain View. They have Edison bulk string lights hung back and forth across the ceiling, which is made of some form of metal tiles. Overall Rating and is it worth a visit: 9.25/10 and absolutely yes. Always worth visiting, whether you are a local looking for top-notch barbecue or a visitor coming from out of town on your own bbq journey. I had gone a couple of years without visiting Post Oak after my initial review, as I was spending my time trying other establishments throughout the state to see if any could rival or dethrone them from the top spot. While I had a lot of solid bbq at other pits, none were truly able to beat the brisket or overall bbq offering that Post Oak provides. As soon as you walk in, you're smacked in the face with a pleasant aroma of smoke and delicious meats and greeted by an extremely friendly and attentive staff, who are always willing to answer any questions you may have and will help guide you towards your best option. The owner is typically on-site bouncing around and helping both front and back of house, always looking to make the experience an enjoyable one for his customers. In true Central Texas-style, you have pickles, pickled onions, and white bread available at no extra cost, with soft drinks and sweet tea to go along with a full bar and tap list. While I'm not a whiskey guy, they have a large scale collection and have some daily specials on these for any enthusiasts. For the Texas traditionalists, they also have Shiner Bock available, along with several other beer and N/A options. Overall, you can't go wrong with making a stop here, as they have consistently been producing some of the best barbecue in the state for years and somehow only seem to keep improving. Whether it be for the brisket, beef and pork ribs, or just the enjoyable and energetic atmosphere, this is a needed first stop for anyone curious about Colorado BBQ.
