I've eaten for from vital root twice now. The first time was take out and it was better to eat at home than at the restaurant. I ordered the falafel wrap, which I highly recommend. My wife got the pad Thai which was good but a kind of small portion. I decided yesterday to take her there so we could get the in house experience. We decided to sit in the patio. All the chairs along the wall were covered in dust and most of the tables hadn't been wiped down and time recently. We grabbed one of the QR codes to order at our table. The QR code wasn't working but nobody had taken the opportunity to tell us this as we walked in and sat ourselves. So we went up to the counter to order. The staff was very friendly and easy to work with. I ordered the Cobb salad and my wife ordered the bahn mi tacos. The salad came out and was really good until I ran out of dressing and the toppings. So I'd recommend not to order the full size Cobb unless you want to eat an entire head of lettuce and a cup of toppings. My wife's tacos were dry and cracking apart as she ate them. She was pretty disappointed at the dryness in the tacos. She said the flavor was good but the portion wasn't worth $14. Maybe for 3 tacos but not 2. Our take away was that it was a high price for a low experience. Fast casual should still come with a higher standard of presentation all around and better communication to customers if something isn't working. The restaurant felt under staffed last night and it showed. I'll go back but only for take out. It is hard to find a restaurant in Denver that is consistently good every time you go in, especially with vegan restaurants. But Vital Root is always good all of the time. It feels like you have the same person making your meal each time. The people who take your order are kind and welcoming. They are extremely helpful and accommodating. They always remember to ask about food allergies and will work with you if you don't know what to order so you can find the best thing. I also love that things are vegan upon request. It makes it really easy to go there with people who have all different types of dietary needs (or none at all) and everyone can find something that they will love. I have to recommend my personal fave which is the vegan chicken bacon ranch wrap. I am not vegan so I get it with chicken but I don't eat pork. They have done something miraculous to seaweed to get it to taste exactly like smoked bacon. I mean all of the flavor and none of the cholesterol. We also order the vegan nachos with tamari mushrooms. The mushrooms are absolutely fire. Then if that weren't enough of a meal you can go back to the counter and get delicious desserts that are healthy. They don't use regular cane sugar and find a way to incorporate crazy things like beets into a brownie! Read moreThe manager spoke very respectfully to his staff. I overheard him offering to help resolve a schedule conflict with an employee and said, "if you need tomorrow, I'll move around the schedule. Just let me know what you need" or something like that and it was very sweet. When one of the newer staff needed help, the manager was not rude about it, and just jumped in to help them. (Not sure of his name, but he had tattoos on his arms) The rest of the staff were friendly and helpful as well!
The food was amazing. Vegetarian/vegan food is hit or miss, but this was a home run. The KBBQ wings were great, and the different sauces were so delicious (try the hot honey, I don't like spicy stuff, but it's not too hot and it really compliments the KBBQ flavor). The two banh tacos were a good size, and tasted great. We poured our extra sauce from the wings on the tacos and it made them even better. The smoothie was okay, but my partner really liked it. The beet brownie was surprisingly soft, not dry like some cafe desserts tend to be. My only complaint is that all of the desserts come in plastic tins rather than serving some in the plastic and dine-in on a plate.
The decor is cool, the music isn't loud and overbearing, and the front is open to the street so you can get shade but still get the outdoor seating.
