This location is affiliated with the Bardenay restaurant group, it opened March 16, 2021 and had a slow start due to the economy and timing but is one of the most popular places in Eagle now. Bardenay claims to be the first Restaurant Distillery in the U.S. and is a little more informal. Coyne's is a perfect place for date night, usually not as noisy as the Bardenay restaurant next to the Hilton Garden Inn. It's really a stunning location, a beautiful design and has outside dining and overhead heaters with clear plastic side curtains which allows for use all year round. The menu gives the chefs a chance to show off a little in presentations and ingredients. The owners of the restaurant group decided recently to change the company to an ESOP, so is now employee owned. This change can help in recruiting staff and elevating talent. Happy Hour scores a lot of praise for an interesting choice of menu items and the restaurant just recently switched from a BOGO for alcohol drinks to half off pricing on each drink. Three menu reasons to go at Happy Hour: Ahi Nachos: Ginger ponzu marinated ahi tuna, crisp wontons, avocado, sriracha aioli, sesame seeds, scallions, tobiko. $14. My only suggestion for the kitchen, spread some of the toppings past the top layer. The left-over fried wontons do heat up nicely in an air fryer with some Tillamook shredded farm style cheeses. Curry Lettuce Wraps: Butter lettuce, curried chicken, curry dressing, green apple and crispy rice noodles, $7. This must be one of the best values on the menu. Over time the presentation has changed and now it’s a "fix the ingredients as you like" and has more lettuce leaves. Bonus tip: with a cup or bowl of their gumbo you have a whole meal. Dark roux, Cajun chicken, andouille sausage, green & red bell peppers, onions and steamed white rice. $4/ cup, $7/ bowl. Higher prices during regular hours. Note, no seafood in this version of gumbo if you happen to be allergic. Brisket Tacos: Two smoked brisket tacos with guacamole, lettuce, Pico de Gallo and Cotija cheese, served on flour tortillas, $9, When the restaurant opened it was four meagerly topped tacos, much fuller and hearty version now. You really, really must like onions for the Guacamole appetizer, so I passed on Coyne’s version. It has Jalapeno, yellow onion, cilantro and lime and is served with fried potato scoops. HH price is $10. That same evening my friend had the halibut and chips, I didn't taste it but it looked like an ample portion. June 2024, went early on Friday night to get a booth in the main dining room. They do take reservations. I had the Alaskan Halibut with a Macadamia nut crust, lemon grilled asparagus, and creamy horchata risotto with honey. $35, ⭐️⭐️⭐️⭐️⭐️ My friend ordered the 14-ounce Wagyu Ribeye steak, normally served with rosemary mashed potatoes and chef’s choice vegetables, for $55. He chose a side salad and fries. At that price I personally would expect a nice traditional steakhouse baked potato or more upscale side dish choices. My wife had the Curry Chicken Chop salad entrée : butter lettuce, curried chicken, creamy yellow curry dressing, snap peas, green apple, cashews, crispy rice noodles. $18. A favorite of hers since the grapefruit, avocado, and shrimp salad went off the seasonal menu additions. My friend’s wife ordered the Beet Salad: panko goat cheese Chèvre, red and yellow beets, avocado, pistachios, arugula, olive oil and lemon dressing. Sometimes she has the restaurant add grilled shrimp which really puts it over the top as an attractive salad. You should have used 1/4 teaspoon of cayenne in the Napoleon instead of 1/2 teaspoon... Just had to chuckle. With so much thought and care that you put into your response, you would have assumed I'd be more respectful? If you had given me a name to speak to, that would be familiar with our experience, that would have been a start. An email for me to provide additional detail? Did you read below? I've read thousands of food reviews over the years, the detail in the below is well beyond most. If someone has a gun to your head and has forced you to respond to me with something, anything, I apologize. If what you wrote is your well thought out response, I now know why the details were botched on our entrees.
Next time, consider starting with, "Gee, I'm sorry your 30th anniversary meal wasn't stellar..."

Service by Skyler, and others, was great, had waters quickly, beers and sodas came out quick. All orders were spot on, etc.
We sat near the window overlooking the outdoor fountain. It was 100 outside, so we were glad our reservations were for indoors. Overall, the service and ambiance was great.
The food, however, was just average when the full meal was taken into account.
For instance, the Caprese toast was good, but would have benefited from a more even distribution of the balsamic glaze. The Ahi Tuna Napoleon was just a spectacular appetizer. The bread was a bit overbaked, but the honey garlic butter would have made an old shoe taste good.
The entrees (minus the grilled cheese), all had minor to major flaws, due to the kitchen staffs execution problems.
My wife and I each had the Lobster Cream Pappardelle. The pappardelle tasted very much like a store bought dry noodle (similar to American Beauty egg noodles), which, when compared to Caci's pappardelle (hand made fresh), fell well short of a high end resturant experience. Additionally, the langoustines are very small and delicate, but were cooked so long that they were chewy and stringy, almost dry, even in the creamy sauce... WAAYYY overcooked.
The short rib Ragu was very tasty (per my daughter), but suffered from the same run of the mill noodles as the other dishes.
My son and son in law each had the 12oz. Wagyu New York Steaks, which were tasty, but unevenly cooked, with some of the steak medium, some medium rare, and some areas actually rare (I am a butchers son, so I know my meat temperatures very well). They both ordered medium rare.
Overall, the service and appetizers elevated the very average 3 star entrees into a 4 star overall experience, but do not mistake that for a high end dining experience. For $360+ meal (we don't drink wine), the entrees fell well short of perfection.
If you are celebrating (It was our 30th wedding anniversary), just do yourself a favor and go to Chandler's, or Barbacoa, if you want a special meal.

Read more04/2023 returned to review new flavors. I ordered the Lobster Cream Pappardelle and my guest ordered the Butler’s Steak Risotto. My dish was most tasteful, noting the generous portion of the “lobster”. However, the Butlers risotto was ordered “medium”. It was presented “very rare”, and I mean really rare and almost bleeding. I had recommended it. Considering the cost of the plate @ $34.00, and the restaurant being an “upscale” venue with a good reputation, I would expect the dishes be delivered in perfect order. It was disappointing that my dish was delivered piping hot and the Risotto had to be returned to the grill. It completely ruined the vibe I expected for this restaurant. I slowly tasted my dish as the temperature faded hoping the steak plate would hit the grill immediately, seared to medium, and quickly returned. It was returned at 5 minutes slightly grilled and not yet medium. I couldn’t believe it. So disappointing for Coyne’s. Note I’ve reviewed 170 restaurants and have seen the good, the bad, and the ugly. I can’t say Coyne’s stood up to it’s reputation this time. I ordered the only locally produced brew offered. I noted they have an extensive list of beers and wines however only one local brewery. I always promote the ”local” restaurants that support local brews. It makes sense. Coyne’s does carry its sister restaurant Bardenay whiskey. A good move! Carry more local beers and wines. Locals notice. National distribution labels don’t empress me. I want to note our server Kelsi was great, she did everything she could to make it right, though the mood was lost. Thank you Kelsi and the complimentary second glass of Eisenhower Cab Franc was very much appreciated by my lady. It helped settle the disappointment. Your suggestion to try the cheesecake dessert was perfect. May I suggest the management draw attention to the cooks experience and attention to detail. It truly makes a difference, as an old friend once said “reputation proceeds you”. Especially when you are spending $100.00 plus for two. I’ll be back.
10/2020. A new place in Eagle. We found the restaurant extremely comfortable. The service was professional and friendly. A critical standard for a great local restaurant is their selection of local breweries. This is critical. Support local businesses that support local businesses. I tried the BUTLER’S STEAK RISOTTO.
