I grew up in Chicago so I know backyard barbeque. Lived in Florida for 20 years, so I know Southern BBQ. Haven't been to Texas but I'm aware of and have had the pleasure of Texas BBQ, from someone who trained there and have also had the pleasure of both brisket and whole hog from someone who studied at Myron Mixons school in Georgia.
Myself, I've won an award (yes just the one) for BBQ Chili at a county-wide competition.

This wasn't even something I'd serve to prisoners, well, maybe...but I'd feel bad about it.
It was a Saturday night 7:30pm, not exactly an off hour or a time you could say would be slow for the kitchen or particularly bad time for dinner altogether. Parking lot was decently full, so it all seemed good. Reviews also great so that lined up and there was even someone inside who was speaking highly of the quality so we figured we were finally in for some good BBQ close to home.

My wife got the pulled chicken, I got the burnt BURNT ends, and we got the chips as an appetizer. Ordered a Knob Berry (Knob Creek and Cranberry juice) and that was nice! Server was also very nice, polite and quick!
The chips which said they were dusted with some kind of rub? I don't know what they consider a dusting but it was just unsalted home cooked chips, which would have been fine on their own but they weren't even warm. So not made to order which is alright but not even under a hot lamp? Definitely not a dusting anywhere to be found, but thankfully there's an assortment of watery BBQ sauces at the table to accommodate the tasteless chips.
Definitely a vinegar-based joint altogether so if you're a fan of KC BBQ then I guess this hits home for you? Otherwise absolutely stay away from this place or you'll probably end up regretting it.
Man even the pulled chicken was sitting in some type of watery oily juice that shouldn't be there... But hey, I guess people enjoy the sloppy ness of the way the food is served?
The only thing that made it worse is that the server clearly saw that I hadn't eaten more than 4-5 bites of an overfilled portion of burnt ends, and said nothing. Even when they cleared the plates, didn't ask if we wanted a box so they didn't event care. Hopefully the cook cared enough to ask the server about the food but the problem is since there was no communication to me, how would the cook know what was wrong?
Not that it would matter. It's hard to comment on something so rancid and attempt to give any advice aside from '86 it off the menu tonight and try again tomorrow'.
Maybe it was a bad day for the cook, maybe the equipment was off, maybe the weather messed up the timing and temps, maybe... Lord knows I've had my fair share of hellish days behind the grill. In the end though, you know you shouldn't have served that pile of cubed crap in a bowl and even remote attempted to be proud of it.
Hopefully I never forget it either so I don't even end up back there by accident. I don't even care that the prices were what they were. It was just horribly disappointing that the quality of the food was so poor as if you don't even care what you're serving up.
Whatever it is, whomever is responsible, fix it.

I tried placing my order online twice but was met with an error on the page each time after I placed my full order and payment information. I then called three times to finally get through to someone to place my order, which on top of the online ordering mishap, is a little frustrating because they have a long automated message you have to bypass before you can speak to someone first. However none of this was there big a deal and certainly not a big deal breaker by any stretch. I placed my order ahead of time around 4:15 to be picked up around 5:30 by my dad. I thought placing it ahead of time would be helpful and bypass some of the lag time associated with short staffing issues that many placed have been experiencing. I thought wrong. We ended up having to drive back to the restaurant from huber heights because they only gave my dad half our order. They completely comped the food however our food was basically cold by this point and on top of the extra wait, the food was overall pretty underwhelming. The ribs were so disappointing. My dad and I thought they tasted freezer burnt/old and they were just... dry. I've had better ribs at pretty much every other place in Dayton. We got the smoked wings because so many had said this was one of the best items but a few of our wings were really dry and sad looking. Most of them tasted good but they didn't come close to the hype I heard about them and I don't feel I have unreasonable expectations for this sort of thing. Also my dad's fries were cold from our food waiting out and some soggy from being cooked improperly. The rest of the food was decent enough. I liked the burnt ends although they could have been more tender, my dad liked his pulled pork and my wife thought the pulled chicken was okay enough although nothing to write home about. I will say we LOVED the corn bread. We all thought it was best cornbread we've ever had. Also the sweet potato casserole is the one best things I have ever eaten in my entire life. Those two things might have been the only redeemable part of our meal for a place with such incredible hype. Read moreAight, been a while since I had BBQ. Still, im using carolin brewing BBQ as my reference to this. Tldr: honestly for the price vs. The flavor its not worth it. If you wanna support fire houses go eat at fire house subs instead. Pros: service was fast and they never complained about me asking for random extra things like cups to mix sauces. It technically is supporting fire houses. The fire house chili with sausage was pretty darn good, upcharge from 3.25ish to 4.75 for it, but it was solid. Came in about a small coffee mug amount. Honestly it was expensive but it was far and above the most worth for the cost item. The sweet potato casserole was solid. You gotta be wanting the Thanksgiving dinner taste tho cuz its loaded on nutmeg and such, missing the brown sugar glaze and nuts, but the flavor and mush of it was not bad. Same upcharge as fries. Came in about a 1 scoop of ice cream size amount. Their chips that dont come with the meal unless you wanna go charge 5 dollars per entree, were well seasoned and tasty. Cons: Fries are an upcharge. Don't do it. I kid you not, every single fry had zero salt. No salt at the bottom of the dish either. It was about a medium mcds fry amount in well fried just thick enough to dip and hold the sauce dipped in. Fiance ordered the pulled rib meat sandwhich. I kid you not, it was only seasoned with pepper and salt. No sauce. It was dry as hell and being basically unseasoned on a plain Kaiser bun it was basically inedible without using a sauce from their table. My sandwhich, the Texan, was basically the same problem. Sausage and the brisket was literally unseasoned besides salt and pepper. No other flavor, tasted like I was eating a boiled piece of meat. Sausage was better but still needed dipped in sauce to really eat the whole thing. That cost 19 dollars before tax.. Overall. Seriously not worth it.
