The Pie Factory of Florence — Restaurant in Florence

This was our first visit to The Pie Factory. As someone who has cooked in Italian and Mediterranean restaurants, I am very hesitant to try pizza joints... and also very critical. Additionally, as a wheat allergy sufferer, it is difficult to find good pizza that is also gluten free. So, for anyone in the Florence area, this is a fantastic pizza option, even if you eat gluten free!! We ordered the Philly Phanatic pizza (with Roma tomatoes added) with GF crust. My son even thought the crust was better than most regular thin crust pizza, which is his preferred crust type. This was one of the best non-red sauce pizzas I've had in years. High quality ingredients that were very balanced in flavor. We also shared an order of the James Brown hot wings. While being a traditional Buffalo-style hotsauce flavor, the wings were exceptional because they were grilled and then baked. This created a great flavor and texture under the hotsauce. The service was also amazing. The waitress was very friendly and thorough, and the food came out quickly. The decor is tasteful and distinct without being overwhelming. We will definitely be visiting this place again in the future whenever we are...

Three of us decided to visit tonight before enjoying First Friday. We arrived early to miss the crowd and were seated quickly. That's when things went downhill. After sitting for more than 20 minutes (remember, this is a non-busy time!), we had to flag down the hostess to have a server come to our table. Our server managed to get our drink order wrong, and then I decided to clarify that she got the food order correct - nope. Finally, having straightened everything out, it seemed things would start to smooth out. Wrong. We ordered a pizza and a low-carb bowl; the pizza came out, but I had to wait another 20 minutes for the bowl to arrive. Talk about disappointed! Reference the pictures... The bowl in the advertisement was filled much more than what I received, and there was no sauce or oil on mine, so it was extremely dry. I really appreciate the thought behind having a low-carb alternative, but if this is what is offered, don't bother! Great timely service. The pizza was really great and my requests were met the first time and without and hassles. The strawberry cheesecake is the best I've ever had. Unfortunately there were some issues I wish I could have overlooked. We witnessed a server taking a pizza rack off another table that had yet to be cleaned from previous customers and she placed it on another parties table with their pizza without sanitizing. During a pandemic I find this incrediably lax and negligent. Also we had water drip from the conditioning vents above us into our drinks and food. When we told staff, it seemed like they already knew about the issue and had chosen to seat us there anyway. They only offered to replace our drinks (we both ordered water) and nothing was done for our food. We probably won't be back anytime soon. It took me a while to convince him to return there this time and I doubt he will be convinced to return...
