recently stumbled upon a hidden gem of a food truck that left my taste buds dancing – the Birria Brisket Tacos truck. The experience was nothing short of phenomenal, and I can confidently say that I'll be a repeat customer. The star of the show - the Birria Brisket Tacos. The flavorful and tender brisket, infused with rich birria spices, created a mouthwatering symphony of tastes. What sets this food truck apart is not just the exceptional food but also the friendly and passionate team behind it. The staff was welcoming, and their enthusiasm for their craft shone through in every interaction. It's not just a meal; it's an experience that leaves you wanting more. If you're a fan of Birria or simply crave a taco experience that transcends the ordinary, do yourself a favor and track down this food truck. I'm already planning my next visit, eager to indulge in another round of those phenomenal Birria Brisket Tacos.

Don't be deceived by the photos on DoorDash if you get this delivered. The portions are much smaller and still pricier than a lot of places with tastier tacos. They were just a greasy mess. Yes, I realize the place is literally called "Fat Charles," but when there's so much grease that any distinct flavors are nonexistent, that's just too much grease. Couldn't even grab a taco to consume because none would stay together. Had to use a fork which wasn't provided to the DoorDasher. Oddly, even though they were smothered in grease, the brisket was still, ironically, dry as a bone.

I visited the Food Truck today. I must say, the food was better than I had anticipated. I had something called the OG Tacos (I had beef and steak tacos, 2 each). They were really good and flavorful! They were topped with a homemade Pico and some kind of sauce that added a great touch. I also ordered a chicken quesadilla. Spent $15 on the tacos (4 in a serving, very filling) and $12 on the quesadilla. I'll definitely return to try additional items. 3/11/23 Yall... I went back for a second time and tried the Mexican Pizza!!! It was AMAZING!! This food truck never disappoints!

While waiting on my wife and daughter at St. Vincent's, my son and i caught wind of food from the bistro. A quick check of Google revealed a 2.7 avg review, pass. The Fat Charles truck was parked in the valet parking area so my son checked their rep as well, 4.7 Bingo!!! The delicious smells emanating from the truck were making promises that my tastebuds were praying they could keep. We ordered the OG Taco meal, 2 chicken, 2 brisket tacos and in about 2 minutes we had our prize. Wandering back to our car in the parking deck to devour our meal with quick access to baby wipes and paper towels. We were not disappointed. My gluttony might have desired larger portions as the folded corn tortillas were slightly smaller than your average store bought hard taco, but everything else about the feeding frenzy exceeded expectations. Very fresh pico, quite likely handmade, generous and tender and juicy beef and chicken with a very unique sauce, hints of sweetness and heat but thoroughly "south of the border" in general flavor. Yep, even my belches activate that unique character to my olfactories. For roughly $16.00 my son and I staved off the grumbellies for another couple hours with a delicious and satisfying foray into the local cuisine. Considering my hit or miss history with food truck fare, this is...
