Nice little spot in Montrose serving fantastic coffee in a space inside a chic office building that also houses multiple other businesses (This is actually the newer, second location with the original one located in Sugarland).
The owner and founder is a PhD in biochemistry as well as authorized Specialty Coffee Association (SCA) trainer, and one can tell that this is an operation driven by science. All beans are roasted in house and there is an extensive single-origin menu that offers beans from areas around the world with super premium coffees available for as much as $30/cup. A limited selection of pastries like croissants and muffins is also available, and, going back to its founder's academic background, the business also puts on classes in various aspects of coffee such as coffee tasting, latte art, and how to be a barista at home.
As far as the space itself, the building boasts lots of natural light, thanks to its large wall windows coming down from the ceiling and ample skylight in the outer lobby. The seating area is split between several tables and chairs in the business proper as well as some chairs, table, and couch in the lobby outside. I had no trouble finding a spot, and it didn't strike me that one normally would here.
On this occasion, I ordered a cup of Raja Batak Peaberry - one of the single origin varieties they have on offer, so as to break away from my normal house drip coffee or cappuccino, and I was not disappointed. The coffee had a more unique, distinct flavor notes (in a good way) than I have encountered in most other coffee shops, and it was obvious that the coffee and roasting being done here is at a more sophisticated level than your average coffee establishment.
While I very much enjoyed the coffee itself, I found the space itself to be slightly lacking. When I was there, there were several buckets placed in the lobby and inside the business to catch dripping water that was coming from the roof with wet floor signs alerting people of possible slippage. I also found the space to have a bit too much of an antiseptic feel for my liking (which is a bit ironic given the aforementioned leaking). I know it's a personal preference, but I like my coffee shops to have a cozy vibe where I feel I can spend hours relaxing among all different kinds of patrons. Blendin Coffee Club evokes vibes more akin to a chic hangout for well-to-do urban professionals to grab a cup and then head on to somewhere else.

She has a deep knowledge of coffee and an infectious passion for sharing that knowledge. Hillary made the learning process both fun and engaging, ensuring that everyone, regardless of their skill level, felt comfortable and included.
The class was well-structured, covering everything from the basics of coffee brewing to more advanced techniques. Hillary was patient and attentive, providing clear instructions and helpful tips along the way. She also made sure to give individual attention to each participant, which really helped to build confidence in our newfound skills. Because this class is a max of 2 people, you really get an opportunity for lots of hands-on practice pulling shots and making milk drinks.
By the end of the class, I felt much more confident in my ability to make a great cup of coffee.
