Haunted by good service. Carrie (yes, that Carrie) poured Buffalo Trace like a high priestess of the Rockies. Smooth, dark, no judgment—just a perfect pour on a cold night. Idaho Springs holds a gem. Five stars.
“Carrie at the Buffalo”
(A Gothic Yelp Hymn in the Style of Sisters of Mercy)
[Intro – Smoky synths, slow drum machine] In the shadows of the canyon walls, The highway hums, the darkness calls… I found my way, through winter’s grace, To whiskey poured with solemn face.
[Verse 1] They called her Carrie, like the book, A name that made me pause, then look— But no revenge, no bloody scene, Just quiet eyes, a steady queen.
[Pre-Chorus] The ice was cracked, the pour was slow, Buffalo Trace, amber glow… No tricks, no flames, no shattered glass, Just kindness here, no judgments passed.
[Chorus] Carrie at the Buffalo— She knows the weight of whiskey’s flow. Carrie at the Buffalo— Dark spirits rise, but service glows.
[Verse 2] Idaho Springs, a ghostly town, Where miners drank their sorrows down, Yet in this bar, she tends the flame, The bourbon’s truth, the barkeep’s name.
[Pre-Chorus] No need for crowns, no royal schemes, She keeps the peace, she feeds the dreams. A haunted name, but not the same, She’s carved her own into this game.
[Chorus - Full Band Builds] Carrie at the Buffalo— She knows the weight of whiskey’s flow. Carrie at the Buffalo— Dark spirits rise, but service glows.
[Bridge – Atmospheric guitar riff] The road was long, my heart was thin, She poured the glass, the night drew in. Buffalo Trace, my bitter friend, But Carrie’s grace will never end.
[Outro – Reverb-heavy fade out] Five stars burn bright, no need for more, Carrie waits behind that door… At Westbound’s hall, by mountain stone, She serves the lost, the far from home…
Carrie at the Buffalo… Carrie at the Buffalo… Buffalo Trace…...

Here's why - because they do them right! Instead of putting the green chili all over the top of the fries, they put most of it on the bottom so your fries don't get soggy and you can mix in the amount of green chili you want as you go! Fries were crispy and made perfectly! Anyone visiting here should order these, you won't be disappointed!
This was our first time here and we were very happy with our choice! We sat on the older decor side (you'll understand once you go here) because the history of the Buffalo Restaurant and Bar is showcased better on this side. The actual bar is open seating, but you need to see the host to get an actual table.
The service was great and the bartender was very friendly and nice, she gave us great service! The beers are good too, if you're an IPA fan, they definitely have quite a few of those. We ordered the Bison Burger in addition to the Green Chili Cheese fries, and the burger was phenomenal!
Overall, it was a very good experience! Service was good, food was amazing, prices for things were reasonable and all the boxes got checked so we were happy we decided to come eat here! I highly recommend visiting this restaurant while in...

French fries were awesome.. But 4/6 orders were wrong.
Missed a kids meal at first, so angry toddler. Wife asked for a well-done cheeseburger with bacon... They came back with a Buffalo burger medium rare. Friend asked for ranch with her burger, no ranch. Her kid asked for a cheeseburger.. no cheese.
Nachos are ok. Too salty and the chicken should be shredded on nachos not large diced pieces, it ruins the texture and ability of the chicken to absorb Buffalo sauce.
The interior looks upscale, but the music was some rachet trashy songs. Men's restroom was disgusting with an overflowing toilet.
Server was nice but they never asked if we needed anything and ran away asap every time.
I've had better food from a food truck at half the price.
Another reviewer said military and first responders friendly... I don't know what that means. I'm active duty and didn't get...
