5 stars is not enough!!! Everything about this food truck brought me back to the streets of Israel. The falafel is perfectly crispy on the outside, soft on the inside, and packed with flavor. The hummus is incredibly smooth and creamy, and the halva was so rich and flavorful—it honestly blew me away. This is easily the best falafel and Mediterranean food you’ll find in Colorado! I was absolutely blown away not just by the food, but also by Adam, the owner—the most generous and caring person you’ll come across. I will 100% be back again!

We ordered in real-time at the food truck and our meal was prepared quickly. We saw many people ordering ahead and picking up quickly too. Highly recommend! 10/10 stars! It’s rare to find such a dedicated human who cares about his food and customers like Adam does- highly impressed! 🥙 Will def be spreading the word and sending friends and family!

My favorite recen addition to the local food scene! These guys use fresh ingredients to build some super flavorful menu items that are great to eat right away or take home for later. My go to when I’m seriously hungry is the loaded falafel pita but I love eating with a group so that we can order a little bit of everything to share. The falafel is juicy on the inside with a crisp exterior that’s perfect for dipping. This is my new weekly grind grub and I can’t recommend it enough!

We don’t always eat out because of health related dietary restrictions. We order Middle Eastern even less because we have high standards for our hummus and falafel. Then along comes Falafayette, which is now our favorite. When we can’t think of what to cook at home , Falafayette saves the day and eliminates the stress! We are partial to the hummus bowls with 6 falafel balls on the side and fries when we want a special treat. We can usually get two meals out of an order. Adam has mastered the art of falafel making and his are neither dry and gagging nor drenched with grease unlike other purveyors. He also knows how to correctly make amba, tahini and z’chug which are staples of the falafel sauce arsenal. In a world full of hate and doubt, it’s beautiful that so many people come back to Falafayette and leave great reviews. Finally, while a lot of restaurateurs skimp on ingredients, it’s clear that Adam never does this. Most of all, what makes Falafayette stand out is his simplest of ingredients. Falafayette has become our go to lunch and dinner spot depending on the day. I get so excited to get the text saying they’re open for ordering. It’s not common to find legit vegetarian food that will fill you up and have a delicious assortment of real veggies. The hummus bowl is my favorite and we always order a labne too. I had never experienced labne before but it shouldn’t missed. It’s so creamy and delicious. I don’t want to call it yogurt because it’s beyond that. My partner and I eat in amazement every time at how Adam (the owner) gets his batches of hummus to perfection every 👏🏼 single 👏🏼 time 👏🏼 the falafel itself is so light and crispy. I don’t eat fried food (or go out to eat often) but these are not heavy or greasy… you’re left feeling so satisfied and never with that restaurant hangover from eating food cooked and fried in bad oils. Stopped by Romeros K9 and this was the food truck option for the evening. Ordered several different items and after the first bite of my pita, the food memory of eating pita growing up in South Florida from Aventura, Miami Gardens, and Plantation just hit me in the feels immediately. The quality is amazing, the flavor is rich in every bite, and textures are all perfected. You can tell Adam strives for an excellent product for patrons as everything tasted fresh and well was prepared. The pita bread itself was pillowy and soft, slightly chewy, and held up its structure stuffed full of cabbage, pickle, spicy sauce, falafel, and all the other goodies, all the while eating one handed.
