Could not resist to try out the just opened Yu's Noodle near Sky Ridge at the corner of Lincoln Commons Shopping Center. The restaurant was well lighted and the ambience was comfortable with Chinese decorations. As many noodle and dumpling places in town, they had a demonstration window showing how they made their noodles. They freshly made their noodles in house everyday, so the noodles were never froze. The menu had side dishes, soup noodles, sauce noodles and rice & chow mein. Did not try rice and chow mein, as these appear more Americanized, but the others sound more authentic. The Yu's beef noodle was hand pulled, while all other noodles were machine pressed with freshly made dough. Ordered beef shank noodle, Zhajiang noodle and beef pancake. The texture of the noodles were good and the taste was authentic. The northern style pancake was quite chewy and tasty. Will try other items next time, but it surely will be another favorite noodle spot in town. Since Yu was not the last name of the owners, was quite curious about the name of the restaurant and could not resist to ask about it. The wife was from Guam and wanted the name to resemble the island heritage, and part of the husband's first name is Yu. I have a feeling this place will be busy going forward, as the food is quite delicious and reasonably priced. The pork and cabbage steamed dumplings were fantastic, with a nice thin wrapper and full of flavor! I would definitely recommend. The Yu's Beef Noodle was pretty tasty, the hand pulled noodles were great, and it was complimented with a flavorful broth with just a touch a spice. It came with a good portion of beef, carrots, green onion, cilantro, bok choy, and diakon. I'd be interested in trying their other noodle soup dishes next time, since a couple pieces of beef were a bit tougher than I'd normally prefer, but I'd also be willing to get it again.
