The Seelbach Hilton, a grand dame of Louisville, certainly lives up to its reputation in terms of architectural splendor. Navigating to the eponymous bar within its opulent interior was effortless, the hotel's bright, rich decor leading us to a starkly contrasting space: the dimly lit Seelbach Bar. The dark, low lighting and imposing, wooden-shelved bar created an atmosphere of old-world charm, and the plush, wingback chairs and large, round tables offered comfortable seating for our party. However, the charm quickly faded. The menu, while presented with an air of sophistication, proved surprisingly minimal. Our charcuterie board, though adequate, lacked the variety and artistry one might expect from such an establishment. The craft beer selection was equally underwhelming, a mere handful of local breweries represented. My choice, unfortunately, tasted stale, suggesting a neglect in stock rotation – a significant oversight for a bar within a hotel of this caliber. The much-touted bourbon selection, the primary reason for our visit, also fell flat. Instead of the rare and impressive pours we anticipated, we were met with a lineup of mostly basic offerings. The service mirrored the lackluster experience. Our server appeared only once during our entire stay, leaving us to contemplate a lengthy wait should we have desired a second drink. While the ambiance initially held promise, the Seelbach Bar ultimately failed to deliver. The underwhelming menu, stale beer, uninspired bourbon selection, and inattentive service were deeply disappointing, particularly in contrast to the hotel's overall grandeur. We left feeling that we had experienced a shadow of what the bar could be, and it's unlikely we'll return. While the hotel is a must see, the bar is...

Best Food In Town!!! This is my new favorite place to go and try new bourbons but the food 😳 The chef I had the honor to meet name was Carl. He is one of the most talented and humble chefs I’ve met. The food is out of this world and cannot be duplicated. I’ve gotten the same dish more than once and it’s slightly different but great every time!! The steak nachos are wonderful !! The Mac and cheese balls are great but the homemade sauce that comes with it is UNBELIEVABLE!! Out of this world!! I asked if he was cooking cause I’m not sure if any of that food could be replicated it’s one of a kind !! They also have a variety of bourbons the flights are fun and they really seem to be knowledgeable about the bourbons. It’s a great place to start off if you’re a bourbon enthusiast for sure. I’ve discovered some new drinks there. Molly is a really sweet helpful waitress. She’s very nice and patient. It’s a great place !! Very historical!! Most people go for the bourbon from my observation but as long as Carl is in that kitchen, I’ll be a regular returning customer. Literally the BEST...

Old Seelbach Bar very poor. Food slow and not worth money. A wagging party of 40+ individuals gathered and blocked aisles and the noise volume was unacceptable for a dining establishment. So crowded that we actually had people standing and watching us eat our dinner. I have video and still photos of group. Egress routes also blocked. Low point was when someone took one of our extra chairs, while we were eating. Then another person came to take two more chairs at our table. Unacceptable environment. Food not worth price. We informed manager (Mark) who said he talk to the group. Sadly we returned to Seelbach because of our first experience. Not sure I could recommend the hotel based on...
