This pizza is on fire! Exactly what I dream of what I think of good pizza. When I first rolled up to the trailer and saw a large group waiting out front, I was worried it would take a while to get anything made - but the guys making pies turned out my pizza and wings in around 10 minutes. My detailed pizza analysis: Crust: 5/5 - Perfect dough with awesome flavor, just the right amount of crunchy on the outside and soft on the inside. Sauce: 5/5 - Outstanding tomato flavor from their house made sauce. Toppings: 4/5 - Pepperoni, ham, and cheese were all fresh and tasted great. The only minor criticism I have is that the bacon was mostly fat/skin pieces. Preparation: 5/5 - Cooked perfectly, just the right amount of toppings, and completed in an impressive amount of time. The wings weren't as good as I hoped, but I'm used to eating fried wings and it's difficult to match that texture when baking them. I Donny know how they do it, but when they get it right… it’s so right. Am I giving them a 5 star, no. But I wouldn’t be surprised if others do. I’m just reserve mine for the best-of-the-best, and Cascadia is pretty darn close. They’ll definitely the best near us. Don’t hesitate to give them a try. My wife usually gets The Lombardi (plus sausage), and I’ve tried a lot of them- usually landing on something very carnivorous.
