Okay, so this experience was from a while ago, but I'm expanding all of my reviews from Yelp to multiple formats to get opinions out, and this is one place that they couldn't pay me to go back to. So, that should tell you something:
If you want to go somewhere that wastes your time, has no problem with "meh" service, and food which lacks any real flair, then this is you place to be! My family and I went to Rojas mid-day on a Sunday and they happened to not be busy at all, now that I think about it though I'm not too surprised as to why. In the defense of our waitress she was actually not to bad, could have been a tad more attentive, but I'd let it slide if it was just her that I was amazed with. After placing our order we had a long wait for the food, then when it came we immediately noticed that some of the food appeared to be rather dry, so my mother requested some more salsa. The young man who brought our food politely said that he would bring it right out, then proceeded to go and chat with his buddies, completely ignoring her request. After a few minutes I flagged down another waitress and made the same request a second time for some regular salsa, was given a similarly polite response, and we never saw her again. Eventually our waitress returned to check in on us, but at that point the food was cold, and salsa was pointless, but we did mention the issue with her, and she apologized, but offered no concessions for the inconvenience. After we received the bill someone appearing to be a manager, but wearing nothing signifying that he actually worked there stopped by to ask us how our meals were, and we replied with "Okay I guess". This imitation manager responded with "Perfect!", and so now we know where their bar is set to challenge themselves at this establishment. Read moreMy wife and I like this place, we really do. The food is great, and the service is great when we actually dine in. The issues we have are with the take out. Starting with the pandemic, we were trying to help support restaurants with more to-go orders. We have been getting orders from west Roja typically once a week since then. They are horrible at to-go orders, from then up until now. There is something wrong with every single order we make. Here are some examples: They text to say your order is ready, go inside and order isn't even close to ready. At least another 10 to 15 minute wait, usually longer. You go inside to pick up an order, no one wants to ring you out. Just stand there for 10 or 15 minutes waiting. You go inside to pick up an order, and they say the drinks have yet to be made. Another example of a15 minute wait easily. The drinks are part of the order, are they not? (This one happened to my wife today, which is why I'm typing this. Order was supposed to be ready according to text, took an additional 20 to 25 minutes for drinks. We aren't getting to-go drinks anymore.) Missing food items. Incorrect food items. Shorted food items, order a pound of salsa and get a half pound (yes I weighed it). Order a pound of salsa and a pound of queso, get 1 little bag of crumbs to dip in them. All of these examples can occur at any hour of the day it seems. Busy or not.
We live 25 minutes away from Roja. Work in Omaha, pick up Roja, go home with it. I guess it's our fault for continuing this vicious cycle, but it's one of the few restaurants we can agree on these days. Roja take...

Since moving to Omaha almost 3 years ago for work, my wife and I were in search of "our Mexican restaurant" which typically consists of our attempt at finding a place with vegan options for her, and a perfect chimichanga for me.
The day we walked into Roja, my life changed forever. Nevermind the main entree that this review is mostly about. At Roja we found the most consistently good salsa week over week. Chips are the perfect blend between crunchy, warm, and thin. My wife found plenty of vegan options. We were sold. We started coming every week.
About 3 or 4 weeks into our new routine, I tried the Stacked Shrimp Enchilada, and this dish is why I'm here writing this review. I ordered it out of curiosity: an enchilada filled with Shrimp, topped with a fried egg, and a generous portion of avocado. My first bite in and I was already in love.
Now we go to Roja almost every Sunday, and I get the same thing. My only advice for eating the Stacked Shrimp enchilada is to enjoy yourself in the moment, and savor every bite. The best bite is one with all of the garnishes: the avocado, Pico, and jalapeño. I tell work colleagues, clients, and now you, the reader, to go to Roja and try to Stacked Shrimp enchilada. Tell me it's not the best meal you've ever eaten...
