• we had gone to happy lemon, and uncle dieu's food truck was in the shared parking lot, so we decided to get some food! • we came around 3:30pm on a tuesday and there was a decent amount of parking available • uncle dieu came out of the truck with a smile and walked us through his menu and his recommendations. this was incredibly kind, and it was helpful as none of us had ever tried vietnamese food • the prices!! so good for the amount and quality of the food you get!! • i ended up getting the pork chop rice and it. was. incredible. the pork was tender and flavorful, and the sauce it came with was sweet and delicious • my friends got the vietnamese pancake, the garlic shrimp corn, and the baby clam wrap. i don't eat seafood so i didn't try them, but they loved their dishes. they specifically loved the complex flavors of the food • there are a couple of tables outside of the food truck if you would like to sit there. we sat while waiting for our food and he brought it out to us when it was ready and had us try it in front of him to get our reactions. we spoke about his cooking journey, his family, and his business for a while too • uncle dieu is hands-down one of the most authentic, genuine, and passionate people i've ever met. he is so excited to share his cooking with the world and deserves all of the praise he gets. please...

We came here after checking out the market next door because I was starving and I cannot tell you how great the food is. I ordered the beef pho, which was brought in a nice plate, a spoon, some chop sticks, and some sauces to dress it up a bit. I was not expecting that the quality of the pho would be superb!
Uncle Dieu did not skimp on the meat, something I notice in other Vietnamese restaurants. Do consider that it is a “one man show”, so you see the owner taking care and providing his personal attention to each and one of the customers. Nevertheless, he did not fail to make us (and the guy sitting next to us) feel comfortable.
It is also a food truck, so it is parked in a parking lot. Don’t let this deter you, however, because Uncle Dieu provides the seats and tables for you to eat comfortably.
I also ordered a Vietnamese iced coffee, which was very flavorful. The picture shows the cup “full of ice”, but I guarantee you that this will be the best iced coffee you can purchase for $3-4 bucks in the entire area.

The beef pho was delicious and made perfectly. It comes out with bean sprouts cilantro and basil already in it, so I can't mess it up when adding things in. The broth had a perfect flavor so I didn't add anything into it other than some Sriracha to make it spicier. He recommended me some coconut milk sauce snails and I trusted his word. It was scrumptious. The flavor of the snails mixing with the flavor of the coconut milk sauce it was perfect. It made me feel like I was back in Southeast Asia. Chef Dieu is a kind man. He came out and showed me how to get the perfect bite when I tried to eat the snails, and even accompanied me and asked me what brought me there. He made me feel like I was an old friend and we were catching up. The place has a diverse menu and everything I had was amazing. He talks about how he gets so many five-star reviews.
