I had hopes for this place, but the lack of truth in advertising left a bad taste in my mouth.
My girlfriend and I came here because she really wanted to try the coffee flights on her birthday. For reason I won't specify she has dietary restrictions that make something like this a rare treat. We arrived at Jinkies at 150PM (closing time 4PM) on Saturday 10/26. The shop was fairly quiet with 5-6 customers already seated at tables and only one other customer actively waiting on an order. When we tried to order a coffee flight the woman helping us (a long-haired brunette, probably not the owner based off the website photos) said they'd stopped serving flights for the day. She also said, "We normally shut down the coffee flights an hour before closing, but today we only have two people, so we closed them down sooner." I asked if she could make an exception since it was my gf's birthday, but the answer was still no. We still ordered drinks since my gf wanted to try something, so we got a Potters Potion and a Monster Mash. The Potters Potion was okay, but it didn't really have a noticeable butter beer flavor. The Monster Mash, however, was a lot more flavorful, and you could actually taste the caramel and apple.
But again, my main gripe is over the service. If you couldn't make coffee flights due to lack of ingredients and/or malfunctioning equipment, that's totally acceptable. However, you just didn't want to take the extra time to make them when the store was dead. Isn't it the customer's decision if they want to wait longer anyway? Moreover, if hypothetically speaking the issue was that the absent employee was the only person trained to make coffee flights, then why is that the case? Your website says the coffee flights are "available any time during open hours". It doesn't have any fine print that says they end an hour before closing or sooner due to staffing availability. Had you included those caveats in your advertising, I would've been okay with that. But you just didn't want to deliver a product when you had the ability.
EDIT: I noticed the owner changed the website to say, "Flights are served on a first come, first serve basis. Availability is subject to change based on supplies available." While it's nice that she (whether it be mother or daughter) corrected her advertising to be more truthful, it would have been even nicer if she took the slightest bit of accountability and addressed my review directly. That goes a long way instead of sneaking in a ninja edit whilst saying nothing and hoping no one notices. It...

The two times I have gone, I have been a bit disappointed with my beverages. I wish I could give 3 1/2 stars, as it is partially my own fault. I have tried both a seasonal ube drink, and their typical special menu ibe drink .. and both left something to be desired. HOWEVER, I do believe this could have been somewhat circumvented if I had chosen a different milk. Get oat, or something creamy, INSTEAD of almond .. as the almond milk in this specific instance makes for a rather .. watery latté, with a sokewhat .. artificial and empty finish. Their rainbow bagels, however are lovely; and the pastries that I have tried have all been delightful. I fully recommend trying them.
The service is impeccable. The girls that work there are always very kind, and the lady who runs the place has always treat my wife and our friends with respect. Being a very visibly gay couple in public isn't always a sure-fire way to be treated well, and it's not even a concern when we come here. They are prompt, speedy, attentive (without hovering), and open to any and all inquiries!
The atmosphere is lovely. They have definitely curated a vibe, and the overhead soundtrack tends to be pretty chill. I do think, however, that the place could benefit from some mood lighting at times, and perhaps a larger assortment of games and whatnot that visitors could pick through! If you have celiac (or probably food allergies in general) just be aware that the staff isn't knowledge about this. There are lattes that contain gluten, and shared equipment is used to prepare other items. I specifically mentioned that I needed a gluten free product and asked if iced coffee is simply poured into the cup and would not come into contact with anything. They said yes. I double checked that the soy milk was gluten free before ordering that, and it was. Then the barista used a stirrer to stir up my iced coffee after they added the soy milk. They told me it's fine because the stirrer is washed been uses. I watched them prepare a latte and noticed that "washed" between uses just means added to a cup of water. I asked them to remake my iced coffee and soy milk without stirring it, which seemed to anger the barista. A little knowledge about cross contamination can go a long way!!
If you don't have food allergies, this seems like a great place to hang out and enjoy some coffee and snacks. There is a lot of variety and interesting flavor combinations...
