Y'all. I. Swear. To. God. The food that the chef's in the back whipped up will blow you away. Everything from the Yuca Fries (my first time having Yuca), them bomb a* sandwiches, and the fried steak, will make you slap someone's mama. Living in LA, I always believed Palmdale to be home to nothing but sand and tumbleweed, but if someone told me that there was a jewel hidden amongst it all two days ago, let's be real, I would've laughed in your face. But y'all, if you ain't had the pleasure of stopping by here, you trippin'. The food was a little pricey, yeah, but you get a completely different experience for it. To top it all off, if Baracoa is a jewel, then the three waitresses that we had are the diamond plated setting in this delicious a* ring.
Alisha, Daniel, and Tammie, were nothing short of the best waitresses that I have ever experienced in any sort of restaurant setting. Beautiful, smiling, and extremely respectful. Normally when you have multiple waitresses, there's always that waitress that's kind of a b**, who would apparently would rather be doing anything but helping the customer have a good time. Not with these three. Nowhere near. Nooooooowhere near. The synergy that they all had, the way they fed off of each other energies, was, as the customer, certainly something to experience.
Alisha, Daniel, and Tammie (I felt they needed to be mentioned again and in a separate paragraph simply because of how great they were), damn near ensured that I would be revisiting this place time and time again. They were extremely knowledgeable about the menu, and knew what dishes to offer to someone as picky as myself (a lot of food, not foof). The company I was with was constantly kept satisfied by their consistent checking up on us, and catering to our needs. If only they had something like a dragonfruit drink, I would've found a way to give this place 6 stars (let's make it happen management).

Read moreBack again (10/16/2023): I took Chef Blake’s recommendation and tried the Pargo Al Mojo. It took me back to the Caribbean; absolutely delicious Red Snapper. I can’t say enough about the great staff; they are all very good at their jobs. Tonight Jeff took great care of me! Baracoa never disappoints, even on a Monday it’s great! Back again (9/24/2023); it’s not been 3 years. I was just tired on my last several visits! While in Puerto Rico recently, my wife and I tried all of the best rated Cuban restaurants in Puerto Rico, including San Juan. Baracoa is better than PR’s best. Tonight my Ropa Vieja was fabulous as it is consistently!
Tonight (1/26/2020) I tried the Picadillo. On the surface it appears to be a simple dish; after all it’s just Ground Beef in a sauce served with White Rice, Beans, and Plantains. However, once you taste it you realize that it has received as much care, layered flavors, and well balanced spices as everything else on the menu. Chef Blake always checks in with me to ensure I’ve had a good meal and a good experience. Another fabulous dinner! I think I only have one Chicken entree left to try, before I have had them all.
I pass through Palmdale about ever 2 or 3 weeks on business travel. Since I discovered Baracoa, it has been the only restaurant that I’ve eaten at on my evening in Palmdale. I’m working my way through the menu one dinner at a time. So far I’ve had their signature Roja Vieja with Contri, Baracoa Cubano, and the Seafood Ceviche. Everything has been terrific. The Service and Cuban ambiance/music are great as well! On 7/28/19, I had the Pardo al Mojo that Chef Blake recommended, with the Tangent Albariño. Read moreDrove cross country from the east coast and finally arrived on 3/26/23. Before even getting home we decided to go out of our way for great cuban food which would thought we could enjoy here… sadly no. I actually come from the service industry, and by far was the absolute worst I have ever had anywhere. We arrived around 7:20, we were greeted at the door and to to sit anywhere. We decided to sit in the center of the place at a table. 3 female workers were going to various tables and moved all around us, looked at us, and never even brought us a water or acknowledged us once we were sat. Although hangry we tried being as patient as possible. After about 10 minutes 2 seperate tables of couples walked in, one sat RIGHT NEXT TO US. So we figured okay, we see some staff is busy but surely we’ll be given a MENU first. Nope, the girl behind the bar passed right by us and went right over with waters to the other couple next to us and told them menus will be right over. I sat there stunned and quite literally asked my boyfriend if we were invisible? I waited to see if maybe she would drop off some for us on her way walking by us and no. We interrupted and asked for menus. She apologized and got us some. A different girl walks over about 15 minutes later to finally take our order and claimed water was coming (but never came). After another 10-15 minutes or so and not a single water or cocktail on the table, we just walked out. All that time to be straight up ignored and not even get a water for over 30 minutes of waiting is just plain stupid. Restaurants run as a ship. I don’t care if our server was busy, 3 were worker and not a single one decided to take initiative and do their job?? Worst worst worst experience by far. Not a chance you’ll ever see us...
