It is wonderful to discover a place in Old Town where one can have delicious and authentic Chinese food after intense shopping. Entering the restaurant, we were greeted warmly by Christina, I believe the manager. We were informed there was a wait and she would call us before the table is ready. That's so convenient. We didn't have to wait around the restaurant and was able to window shop on Colorado Blvd. Noodle St. not only has great food, the decor is tasteful and calming, the wait staff is courteous but not too solicitous, and best of all, the food came in quickly and at the perfect temperature. We had the spicy beef noodle that had clear broth with tender beef tendon and regular noodle. The hand-cut stir fried noodle was well seasoned without the usual heavy sauce. It had a modern twist to the dish. Both noodle dishes were perfectly cooked, al dente. Beef roll pancakes are a must. The skin is crispy, beef perfectly spiced and fresh green onion and cilantro stuffed into the pancake. Absolutely delicious. As an eatery owner, I believe much of the positive experience is owed to how Christina, the manager, ran the restaurant. She was calm, engaging with customers and helpful with the staff. She created an environment free of chaos, as is often in a restaurant during soft opening. I hope the management recognizes how difficult it is to find such a person to run the establishment and properly acknowledge her achievement. Do go and try...

Noodle with Mince beef sauce was savory and flavorful! For me just a tad bit salty but the soup that it comes with helps. I actually got this on different visit as togo and added some fresh baby kale and spring mix salad tonadd more veggirs and loved it! Will get again!
Signature beef noodle soup; my fave! Loved the broth and i loved that i could swap out the sliced beef shank for beef chunks. Loved the addition of daikons! I got flat noodles and it was tender and good bite to it. Standard is the round, but its great that we have the option to change it but waitress can recommend what goes best.
Beef rolls were like a 7-8/10 for me. They were yummy but the onion pancake could have a little more to it. It was just a little bland, But the beef, sauce and everything inside was great! Would still order again! Ours wasnt oily...
