So I stop by my favorite tiki bar, The Alibi, for a quick Mai Tai cocktail on my way home back to Hillsboro. It’s a Friday afternoon so I decide I better bring home dinner… pizza sounds good, and the Googlemaps says there’s a great place right across the street called Pinky’s. I wander outside and sure enough there’s Pinky’s Pizza. Walking inside to place my order and I think I’ve walked into the wrong place somehow because this looks like The Great Wall of Bourbon, not a pizza joint. So I saddle up to the cool looking bar and order an old fashioned to see if the tender is any good. Oh he was good… veeeeeeery good. Wait, why’d I come in here again? I was supposed to be doing something else but instead I find myself finishing my 1st drink and ordering a cognac Sidecar. A drink that no one makes correctly except myself at home, until now that is. I quickly realize that 2 of the best cocktail bars in the entire Portland metro area are right across the street from each other, and both are still a solid 45 minute drive from my home. Oh the torture! Why can’t there be a bar this good within staggering distance from my house, or at least a cheap Lyft ride away?? Welp at least my liver is grateful. Oh yeah, so order a half funky mushroom and half double pepperoni pizza to go. Are you effing kidding me?! They make fantastic pizza too! Something Hillsboro does not do well, and neither does Beaverton except maybe Ranch. Otherwise you’re driving clear out to the Last Lap in Cornelius for a great pizza. My ONLY complaint, and it’s a doozy, is that the pizza needed more toppings. Not Abby’s style more (freaking love Abby’s but this is a thinner style different altogether) but the mushrooms were very sparse, maybe every 5th bite. And “double” pepperoni means they use 2 different kinds, they’re not referring to the amount of pepperoni. Both kinds are excellent and a bit spicy which was perfect. Just double the amount of those awesome flavorful mushrooms and I’m buying a...
Read moreCame here for quizzo. I Never Would Have Thought 3 Seats At The Bar Equated To Eternal Damnation. Why you might ask. Well, in order to preserve the job security and well-being of The Service Person who RUINED quizzo night for us, I will keep their identity vague.
But the Service Person could not resist, at any single solitary second in the night, the urge to murmur Every. God. Damn. Answer. Every single one, that didn’t have to do with Taylor Swift. The Service Person also confessed in visible pleasure and ecstasy that they deeply enjoyed and welcomed the horrors of Sleep Paralysis.
After the incessant and and deafening sound of their chuckles and murmurs ceased, which assuredly were heard Only By Me and To Suffer Alone In Anguish, we decided that it was imperative we leave the establishment to preserve any semblance of sanity left in our battered and beaten corporeal vessels. As we slid our chairs under the bar, his quibbling words echoed one last time through my head, “Yes. Spaceballz was the answer to number 6. I told ya so! Heh!”.
We will not be back for trivia, however the Host and All Other Staff were amazing and polite...

Speaking of service, our server Emily was an absolute gem. She recommended the Spring Chicken pizza, which is now my personal favorite. The combination of chicken, mushrooms, and tangy sauce is like a symphony in your mouth. I couldn't believe how delicious it was!
But that's not all. The bartender at Pinky's is a true master of mixology. The drinks are so good that they should come with a warning label - they're that strong! And the beer selection is on point, with plenty of local and regional brews to choose from.
And let's not forget about the pizza itself. Whether you're in the mood for classic pepperoni or something more adventurous like the Spring Chicken Pinky's has got you covered. The crust is perfectly crispy, the sauce is tangy, and the toppings are fresh and flavorful. It's like a pizza party in your mouth, and you're the...
