Delicious pho! We had the Wonder Pho and the Lemongrass Chicken Pho. Tender and flavorful. Happily surprised to see how busy they were on a Monday evening. We were seated right away and we didn't have to wait too long to place our order. The wait for our vegetable spring rolls was LONG, and it was very good. My pho was served 30 seconds later. Poorly timed. It didn't come with the side of bean sprouts, basil, jalapeno, and lime (as noted on the menu). No apologies from the staff that they forgot. Reaction seemed like the staff didn’t know and was being imconvenienved. Took a while to get our bean sprouts etc. Our pho was at room temperarure by then, so we stopped eating when we finally got it and took everthing to go. FINALLY, Princeton gets a good Vietnamese restaurant. Really appreciated that there is a veg option in every category of the menu. Veggie pho was excellent! Clearly, they know what they're doing because the soy protein was actually marinated and flavorful. The veggie broth was fragrant and heavy on the star anise, which I really love. Reasonable prices and a cute environment!

Also, I am extra excited to go back and try some of the other things on the menu because, finally, we have a restaurant in town capable of having more than one vegan option on the menu (yes, I am throwing shade at literally every other restaurant in downtown Princeton that can't seem to figure out what to feed vegans more than once per quarter).
