Well, bless their hearts, but I’ve got to be honest about my experience here. The manager, Tobi, seems to be stirring up quite the toxic pot. From what I’ve observed, there’s a lot of drama, talking poorly about employees behind their backs, and even some whispers about tips not being handled right. If those allegations are true, that’s not just unethical—it’s downright shameful. And it doesn’t help that the owner, Mindy, seems to turn a blind eye, letting the whole mess fester instead of fixing it.
On top of that, the food left a lot to be desired. It looked like it had been slapped together in a hurry, and the coffee? Well, bless it, but it just wasn’t good. Whether it was the beans being over-roasted or the brew being over-extracted, it was bitter in all the wrong ways.
At the end of the day, I’d say your hard-earned money might be better spent somewhere else—somewhere the food is crafted with care, the coffee hits just right, and you can feel good about supporting a place where employees are treated well.

Well, Mindy, isn’t that just the cutest little deflection? Bless your sweet little heart, but I don’t think we’re sipping the same cup of coffee here. If your employees are truly treated so well and paid so generously, you might want to have a little sit-down with them because the vibes they’re giving off tell an entirely different story.
Happy employees don’t whisper about tip mishandling or spend their time dodging workplace drama like it’s a dodgeball tournament. And if your idea of treating them well is letting management stir the pot while you look the other way, then maybe it’s time to revisit the definition of leadership.
Oh, and how ironic that you didn’t comment on the below-par quality of your food or coffee. So at least we can agree on something: the food could use some serious TLC, and that coffee might just be better off as fertilizer. God bless, and good luck...
Read morePositively DELIGHTFUL! The inside of the coffee shop is absolutely charming and the ladies (one of whom I now know is the owner), were very friendly and helpful. I asked what their best coffee was and instead of giving me a robotic answer of just reading off what they have, she took the time to find out what TYPE of coffee I like. Once I told her, her suggestion was spot-on! Perfect tempurature, and perfect amount of sweetness, it is one of the best cups of coffee I have had outside of making it myself at home. I also ordered a breakfast burrito and a breakfast bagel. The breakfast burrito was awesome. Great amount of egg, perfect amount of hash browns, bacon and chili. Then it was warmed and placed into what I believe to be a panini press. It gave it an awesome crunchy grilled outside...or to quote an old timey commercial "the lines taste good!" The bagel was mouth watering! This is DEFINITELY NOT your run-of-the-mill coffee shops! I've been in Colorado for 4 years now and have been to a LOT of coffee shops where I come from....I must say that Gypsy Java is certainly one of the BEST I have been to. Atmosphere, baked goods, breakfast goods and above all else, CUSTOMER SERVICE! I didn't just visit a coffee shop this morning, I felt that I had visited a friend's house and enjoyed some good conversation and great coffee. Read moreI used to visit this café fairly often and initially enjoyed the space. The atmosphere was nice, and it was a convenient place to get some work done. Unfortunately, over time, I started noticing issues that made me rethink supporting this business.
The biggest concern is how the place is managed. The service can feel inconsistent, and there’s a noticeable difference in how some customers are spoken to/rung up compared to others. I’ve also heard troubling reports about how employees are treated behind the scenes, which is disappointing to learn about any local business.
As for the food and drinks, there are definitely some quality issues. The espresso is bad. The chai is over steeped. The pastries that are "made in house" taste freezer burned, and after learning that some food storage practices might not meet basic cleanliness standards (see video), I felt less comfortable ordering anything beyond a basic tea.
I really wanted to love this place, but at the end of the day, I’d rather support a café that values both its customers and employees while maintaining high-quality standards. There are other great spots in town that do just that, so I’ll be taking my business elsewhere.
