It took long research on what restaurant to visit while passing Redding, Ca, came to a conclusion Champa Garden would be a good match . Arrived around 1pm and although not so busy many had walked in after. The young woman that greeted us was very nice and allowed us to choose our table. We’re a table of 2 but didn’t want to sit at a small table because I knew I would be ordering a few dishes. I scoped out the menu the night before so I knew what I wanted… The Lao style sausage w a side of sticky rice, papaya salad and a noodle dish. I mean the sausage is uncommon in my area so I had to get it, can’t remember the last time I enjoyed a good papaya salad and we opted for the good ol’ pad se ew.
Lao style sausage – I love that each piece was fried to perfect crispiness, the overall flavor was amazing – you can taste the lemongrass, galangal, chilies, cilantro and it paired well with the sweet chili sauce.
Papaya salad – so addicting with every bite you can’t help but want to eat more as you fight the spiciness and tears from the heat. I usually add a couple of Thai chilies to my papaya salad but I’m glad I said just 1, Never had papaya salad with a side of rice noodles but I really enjoyed it and will definitely start pairing my salad with it from now on.

Unlike other Thai restaurants that serve traditional sauce/liquid dishes like Curry or Brown Sauce. None of their dishes come with a side of white rice. A staple of many if not all asian cuisine. Almost all Thai restaurants Ive ever dined in served their food with a side of white rice. But not this restaurant for some unknown reason. Its just so bizarre and untraditional. Thats the only major negative of this restaurant.
A lot of their younger employees dont really acknowledge you when you are waiting for service. For example I was done with my food and came up to pay. 2 other servers were busy packing carry outs and delivering dishes. While one of the servers was just standing there looking at tables. Looked at me and didnt say anything and then looked away back at the other tables as if she just ignored me. She could of just said we will be right with you in a moment if she was busy. I had to wait for the server packing carry outs to finish just to get checked out. The pho was pretty good for the most part however I would recommend to get the large bowl as you get a lot more for your money. We recently went for dinner and wanted to try something different, so we decided to try the curry. I got the red curry with chicken and she got the green curry with tofu. The curry is more expensive and not a very large portion. However I did think the food was pretty good except the green curry was extremely over salted, and we had to have the waiter send it back. They offered to change it to the red curry for us, which we agreed to. The staff and the cook were all very accommodating and even offered to make the green curry again for us, as it was even too salty for them. We gave them the chance to make it right and try it again and in the meantime while we waited both of the waiters that helped seat us and take our order were very apologetic for the food and were kind and considerate the whole time.
