First and foremost, I want to say that the staff was very friendly, and accommodating. With that being said, there are definitely several areas that leave room for improvement.
They have lots of locally sourced products that would typically suggest great flavor, and freshness. Unfortunately, the execution of cooking said ingredients for the cost, was very subpar.
Here's a few examples. I ordered a Bison Burger, cooked medium. The burger came out medium rare, but more on the rarer side. Not a huge deal, but timing/temping a burger when you charge $20 for it should be an easy target to hit. It also comes with an egg over easy on top. Somehow, the burger was warm, but the egg was cold, and overcooked. As if the egg was prepped, then sat for a few minutes before it was topped on the burger. With the burger, I ordered the upgraded parmesan-truffle oil fries. The fries were way over-salted, had 4 tiny pieces of shredded parmesan on the top, and there was a $2 upcharge. $2 extra for fries with almost no parmesan or truffle oil...
My wife ordered the Poutine. Again, the fries were so over-salted, she couldn't eat them. The meatloaf on top was decent, however. We ended up having to send the order back.
We ordered a kids cheese pizza flatbread for the little one. It was $8. Acceptable price for a kids meal. However, my older daughter ordered the adult menu pizza and it was $18. No problem, until you see the regular menu pizza. It was the exact same size as the kids pizza, but it had a drizzle of truffle oil and almost no arugula on it. It also had a small sprinkling of bacon on there which was mostly all fat. That's a $10 upcharge for a pinch or arugula, a splash of truffle oil and a 4 finger pinch of fatty bacon. That was still the same size as the $8 kids pizza. Had the topping amount been appropriate and the pizza size a bit larger, it would justify the $10 extra. This didn't.
I will say, the management at the time was more than willing to remove the poutine, and upgraded fries, from the bill. They also offered a complimentary dessert, which we gratefully declined.
One waitress was walking around, toothpicking her teeth in the dining room. She was reaching for the back molars...the hand was back there in the mouth. Not a good look, and you dont know if she even washed her hands afterwards...before handling drinks or plates.
We last tried Tusk and Trotter about 6 years ago, at the Bentonville location, and we had a subpar experience then on our one and only visit. We decided to try this newer location, in the hopes there had been better improvement, and we were not impressed with the food. Maybe just our order was off, or the cook was having an off night, I dunno. Either way, the cost/value ratio is not worth the experience in my opinion, if this is somewhat common here.
I'm not cheap, and I dont mind paying and tipping well if the food and service are of good quality. I just happen to believe you should get what you are paying for. If the quality/portion size was better, the price might be justifiable. This...

Mind you, this was the soft opening, so there was still a lot of training taking placing and learning, but the overwhelming potential of this location is amazing!
Excellent location... very close to the outside performance theater!
The greeting was warm and friendly! The ambiance was clean and modern. We sat in the bar area, and I really enjoyed the large TVs over the bar.
I also have been in the restaurant business for a very long time and have hosted many soft openings... so it was nice seeing and experiencing one from the guest perspective.
Our server was sweet and engaging. She was still learning the menu, but her trainer was spot on to slide in and help answer questions!
We had an appetizer delivered as it was a kitchen practice plating. It had a medly of marinated veggies and bacon and pork meats. It was good, though, a variety of different flavors. The bacon jam was good, but it needed an accent sauce...
As I always do, I ordered the burger and fries. Delicious. High quality... beautifully seasoned, so the meat was the star... Added bacon and cheese... I highly recommend it!
My wife had a vegetable Milinisa (spelling) that she enjoyed! Good mixture of flavors and texture and a nice vegetarian option for diet restrictions!
The GM Chris stopped by and checked on us a few times and stayed for a quick chat before heading back into the kitchen, very nice and professional and knew how to engage in conversation but not loose focus of what he was doing!

Read moreI have not been to the other locations, unfortunately, but we were very fortunate to have tried the Rogers location. We started with the fritters - I apologize, my picture was post distribution - and we were pleasantly surprised; the sauce it came with was fantastic, and paired perfectly with the taste profile. I had both the banana old fashioned and the house old fashioned, and while I was afraid the banana would be overwhelming sweet, i was pleasantly surprised by how well it worked. My wife ordered the flatbread, and I thought the ingredients were very fresh tasting and the texture of the bread was crisp but fluffy. I had to try the ostrich, which I understand is exclusive to the Rogers location; I found it a little heavy on the peppery side, but very savory, with a dense but tender texture, and honestly, tasted incredible.
Our service was fantastic. We were never left wanting. Everyone was very friendly, prompt, and super flexible with us when we accidentally sat at two separate tables, not realizing the other half of our party was already seated, causing us to move tables.
The atmosphere was quiet and modern feeling. We really enjoyed being able to see the farm to table concept in both the menu and on their blackboard. You can taste and feel the freshness of the ingredients.
All in all, we unanimously agreed that we'll be back. We're already looking forward to trying...
